"sek" means "to cut" (trees for this case).I've alread heard this tale but it sounded strange to me, and now when I learned from you that this wine is produced on boarder with slavic nation it perfectly explains. I haven't had a col fondo, either. They can be challenging to find outside of Italy. I'm told that the extended time on the lees/deposit makes for more interesting nuances of character and that producers of col fondo Prosecco tend to take full advantage of the option to devote up to 15% of the volume to grapes other than Glera and, in homage to the style, that they favor using local varieties over international. So, it sounds pretty interesting, and I'm pumped to try the style; it's just a matter of getting the stars to align so I can try some. Cheers!
