One year when my son was small was really broke on his b day. I made tuna salad and egg salad, put in containers. Baked some chocolate chip cookies. Made koolaid. Packed it all up in our picnic basket along with some apples, Took him to a beautiful national park went on a hike and enjoyed our picnic. Years later if i ask him what he wants me to make for a b day meal he asks for that same picnic now as an adult Poor man meals doesnt mean dreary. You showcase how good cheer and your love transforms your families daily bread. God is good!
Aww hun that’s a sweet story gave me chills. One year when my daughter was little I had to have a hysterectomy and we were broke ex hardly ever worked I always worked and the time off from work was rough. Anyway I had put some things in lay away for Christmas and I had planned on getting her more but bc of being off work that wasn’t possible so with my last paycheck I was able to get her toys out lay away and to this day she said that was the best Christmas!!! She remembers everything she got that year!!!❤
Snow ice cream food coloring vanilla a little powder sugar 😋 poor man's hamberger thick sliced onion ketchup mustard pickles is you on bread have them .mush rich call it palanta milk sugar. Pancakes . 🥞 my aunts potato soup. water Potatoes onions salt and pepper
I feel you! I was single mom with my son and STILL his favorite Thanksgiving meal and memory is Mom's chicken wings and red kool-aid 40 years later... We made it work out! Blessings sent to you!
My "poor man" favorite meal is a pot of pinto beans and homemade cornbread, with a fresh slice of Vidalia onion. I grew up eating this "a lot" and at 86 still LOVE EATING it often !
People go out to sit down restaurants and fast food places and spend a fortune because they don't want too, they don't like too or don't know how to cook. These recipes feeds a family of 5 for a few dollars and are so easy & quick to make. Thank you for sharing these recipes.
Girl let me tell you 😂 the rice poor Man's meal you made I've been making that for 30 years thinking I was eating very well 🤣 only to find out it's a poor man meal LOL 🤣🤣🤣 That's good eats 😋
When I was first married, one of my go to meals was browned hamburger meat, mixed with rice, canned tomatoes, and a *lot* of garlic powder. Top with cheese, of course. Delicious! Mmmm, I should make that again :)
I love how you guys are so natural! I see the family love, makes me happy watching this! And the food looks great. Need more of those poor man recipes, going to need it here in Canada, because of the greedy prime Minister here! Thank you
I'm in my 70s and didnknow anything about instant rice. My daughter gave me a baggy of instant and I had know idea..how to make it. Old people can learn new things.
I am on an elimination diet plus extended fasting and both Facebook and RUclips are blowing up my feeds with food, recipes, cooking and everything else to tempt me. The struggle is real. These look really good and I will have to try them when I can eat real food again.
Brooke, That potato casserole looks so good! I watched the whole video twice. I have a few potatoes, a pound of mild sausage meat, an onion, a red pepper, peeled garlic, cheese, and two cans of different kind of beans. Guess what I'm making tomorrow? Thanks.
The light green will NOT hurt you. It's from the light. You need to keep them in a COOL DARK place. If it's really dark green like not ripe green do not eat that. Being from Idaho "the tater state" and working in the potatoes from the field on the combine-which digs them, to the pit-the spud cellar, to the potato processing plant-which is where they bag or box them up and ship them out to the stores. Just a bit of info for those that don't know. Not being a know it all. Looks yummy Brooke!! Sometimes the stuff you throw together is the best!!
I get a kick out of these being poorman meals. Seems fit for a king. And cooking like this allows us to put a little money by at a time and that adds up. You are teaching life skills to your kids and to all your of us. Grateful for you and your inspiration
When I’m having a bad day, I look for one of your videos, cuz you make me smile. You remind me of a friend I had years ago. I like your sense of humor, and your sweet kids. 🙂
When Ky almost fell down, I giggled a little when I saw your super-mom reflexes. 😁 My daughter is 24 and when we're in the car together and someone pulls out in front of us I still fling my arm over in front of her by reflex. 😂
When I was a kid, we made a similar hamburger and potatoes casserole. But instead of kidney beans, we used a can of pork and beans. The maple flavor beans from Aldi are great.
I just mixed this up using two cups instant brown rice, two cups of water, one pound cooked ground turkey, two cans cream of mushroom soup, chopped up two fresh carrots, drained a jar of mushrooms, drained a can of corn, and drained a can of diced tomatoes. Topped with Mexican style cheese. In the oven now! Can't wait ❤❤❤
I loved it when you referred to plastic cheese! When I was a little kid (decades ago), my grandmother kept powdered milk in the house and made it whenever she didn’t have bottled milk. My grandfather referred to the powdered milk product as “plastic milk” when he had it with cold cereal.
@@Bamapride1985 I agree. Lol. The things these folks come up with. I had a friend make popcorn salad one time. I was not a fan of it but everyone else was. I can't smoke it because it makes me cough my lungs up, so I abstain. But I don't care if anyone else does. Toke away!!
Brooke, these look very good! The potato poor man could be easily be turned into a Mexican type flavor as well. Here is something my best friend and I used to eat back in the 60’s. We boiled some macaroni, drained it when done, then pour a can of cream of chicken soup over the noodles and mix. Of course we used salted and peppered as needed but I think the soup might have enough salt. We never did this but you could put some extra chicken in it or a small can of children. My siblings found they loved this as well. Take care, my dear.
A Mexican version of this would be a medium onion finely diced, garlic powder, salt, pepper, potatoes and ground meat. Fry the onions and add the meat and cook till done. Add diced up potatoes and cook until potatoes are done season with garlic powder, salt and pepper. This is used to make tacos. It's called Picadeguyo.
Picadillo is the best I have a quick and easy pantry version Brown the ground beef with onion Add a packet of taco seasoning Add 2 cans of diced potatoes that have been drained if you don't have fresh potatoes If you have fresh potatoes then dice about 2 lbs Add a can of mild Rotel Add a couple of tablespoons of tomato paste Bring to a boil in summer to the potatoes are done if you're using fresh potatoes So that's the quick and easy pantry version My family loves it Serve with Spanish rice and flour tortillas
i make the potato casserole with either smoked sausage or ground turkey. i always have green pepper and onions in the freezer so i also add those. its a great meal with cornbread. :)
My favorite budget meal is smoked sausage and potatoes. When I make that my husband goes feral and will eat two huge bowls. The rice version would just be ground meat and diced tomatoes mixed with the rice. And usually the only seasoning I use is Tony Chachere's and Worcestershire sauce. Maybe some garlic and onions if I feel like chopping it😂
Today I freestyled and made a huge pot of chili cheese pasta, it was delicious! A box of walmart pasta, a can of chili ready diced tomatoes (on sale for 50 cents!), a pouch of chili con carne from the dollar tree, and 2 handfuls of shredded cheese. Kidney beans would've been a good add-in, too! I got about 6 servings for less than $3 total. I love when poorman meals come together AND are delicious. Thank you, Brooke, for all you do on this channel. It helps so many people, myself included!
I have a spaghetti a jar of spaghetti sauce and a package of hot dogs. Flavorings that you like or have on hand. I save all my left over pasta in a plastic bag. This means that it is easy to make the casserole. Good old meal from days gone by. Enjoyed Your old time meals.

I can tell you this:: I’m making the Rice Casserole this week!! I thought that looked so good, comforting, and so easy to make! I’m excited to make and serve to my family of three adults
When growing up our in 60's & 70's we had these hot sandwiches - mother would shred bologna & American cheese & onion, then add a some mayo & mix (like you would potatoe salad). Spread on hamburger buns & individual wrap each in foil. Put in fridge/freezer, when it would be lunch time she took out how many there were of us & put each of us a bologna cheese sandwich in oven to heat up. We All loved them! There were 5 kids & 2 adults in our family. That with some chips or mother would make fries - we loved it!!
I love your channel. I have been binge-watching your videos and it's amazing how creative you are. Also, your heart for people to be able to find inexpensive ways to feed their families is such a blessing. May GOD bless you and yours.
Brooke, you took me back today. Growing up my mom made “slumgullion” (have no idea where the name came from. Ground beef, onions, garlic salt and red kidney beans. When I grew up I added chili style beans. Mom said I made it fancy. With roommates we made rice casserole- tuna rice casserole with canned peas and cream of mushroom soup and topped with crushed potato chips, once with a few days before grocery shopping we made - not tuna casserole- canned chicken, canned corn, cream of chicken soup and topped with crushed Fritos. It was alway not tuna casserole. Thank you for bringing some of out childhood to us. Hugs
My mama made slumgullion too, but she added a can of tomato soup. She was raised in Tennessee during the Depression, in the general vicinity of Knoxville.
My Gram made us the tuna and rice casserole over 60 years ago as kids. She wouldn't have used potato chips to make the crunch on top. I think it was something like rice crispy cereal. I know a lot of people who made the casserole with those canned dried onions for the crispiness.
Thank you for sharing your nostalgia and creativity. The potato casserole had all the makings of a “fancy” chili topped baked potato. I would have never thought of making this a casserole but I love it. I had no ideas the chili beans had so much nice sauce. Does it taste the same as “canned chili”? Rice casserole is a winner too. I once ran out of cream of whatever soup and also milk and butter so could not make own but subbed in some jarred alfredo. My veggies on hand were onions green pepper and tomato diced. The meat that time was chicken. Everyone loved it.

Living in Hawai’i our cost of EVERYTHING is through the roof. Your videos help so much give me ideas! Our Walmart has very few great value items it’s all brand name and it’s very expensive it sucks lol and no Aldi!!
that 1st one, my family (northern midwest) calls that "hamburger mush". the basic ing. was meat, beans, and potatoes; then add to or rearrange as budget or pantry allows. i used pork and beans when kids were little as they hated kidney beans for a while. i'm def. gonna try this casserole variation with cheese - looks yummy!
Im 63 and have been poor cooking for a long time. But you have inspired me to budget. And try some of your recipes. Your pork necks you make a stew out of. I put pork necks in my homemade spaghetti sauce. Really makes it good. Thank you ❤
Hello from Cape Town, South Africa! 👋🇿🇦 I absolutely LOVE your channel and content! 😁 These two dishes look so good! I'm definitely gonna try them 😁 Thank you! ❤️
Way back in the day when I was in college in San Francisco, the "dining hall" used to serve "California Surprise" on Fridays to use up the week's leftovers and it was just like this only with leftover scrambled eggs :). Thanks for bringing back a good memory LOL.
I've made something similar with chicken. I actually save cut up pieces of cooked turkey when I buy extra around Thanksgiving in sandwich bags in the freezer to add to things like this, also soups and whatnot. I really enjoy these videos
Today I made a salad with boiled eggs. Yum. It filled me for lunch. considered mushroom soup, or lentils, but will put it on in a minute or 3. I eat like a peasant most of the time. Yum!
Love, love, love casseroles, one pan meals, sheet pan meals! The less dishes the better 👍💯 Only thing id change up with these is I'd use ground turkey and add way more veggies 😋 Thanks Brooke you're an absolute doll 💓
Looks great! I think of you wait and put the cheese on until the last few minutes or possibly cover it, the cheese would stay melty. You have a beautiful family. I raised 7 kids with only one income. We are not strangers to budget friendly meals.
YOU HAVE THE CUTEST SMILE THAT DOES SOMETHING TO YOUR EYES AND I ADORE IT. Ist TIME ON YOUR LIVE AND I LOVE A QUICK MEAL USING LESS DISHES. THANK YOU FOR SHARING...😊
Brook, YOU'RE busting! I'm just loving all of this content. Even my 7year old daughter is enjoying watching with me. She loves your voice. Keep em coming!
This is the kind of food I grew up with - hot, brown and plenty of it. My parents would love this. I wouldn't even say this is a poor man's dinner. You have good basic ingredients in there that will keep you full, including meat and cheese. I thought you were going to make spaghetti noodles with ketchup or something. This is something I would serve my family!
We used to fry potatoes and Fry the hamburger in a separate pan then add pork and beans to the hamburger then add it all together and if we had cheese we put that on top great feeling food
I don’t know why you were in my recommended videos to watch, but I’m sure glad I clicked on it. You and your family are awesome. And both recipes look delicious. I’m a true Irish woman and I’ll eat potatoes every which way you can imagine to make them. 😊 Thanks for some great supper ideas 👍

Thank you...great information about the potatoes....I'd say you really are a potatoe knowledged person. 👍👍👍
True. Every once in a while you can even see some of the light green in potatoe chips you buy.

Yea another Idahoan!
The potato casserole looks scrumptious!!!

@@sonyafox3271 well that's what it was called when I lived it Texas.
Picadillo is the best
I have a quick and easy pantry version
Brown the ground beef with onion
Add a packet of taco seasoning
Add 2 cans of diced potatoes that have been drained if you don't have fresh potatoes
If you have fresh potatoes then dice about 2 lbs
Add a can of mild Rotel
Add a couple of tablespoons of tomato paste
Bring to a boil in summer to the potatoes are done if you're using fresh potatoes

Serve with Spanish rice and flour tortillas

Im 63 and have been poor cooking for a long time. But you have inspired me to budget. And try some of your recipes. Your pork necks you make a stew out of. I put pork necks in my homemade spaghetti sauce. Really makes it good. Thank you ❤
❤Just made it with 2 cooked chicken thighs. Totally delicious. I'll be making it again. Thank you! Blessings to you and yours always.
Hey girl hey ❤❤ these are the kinds meals I grew up eating and still love today❤
If you don't have cream of mushroom soup you could make a simple white sauce!

I know someone who makes Mustgo Casserole alot. What ever is around that must go 😂
Way back in the day when I was in college in San Francisco, the "dining hall" used to serve "California Surprise" on Fridays to use up the week's leftovers and it was just like this only with leftover scrambled eggs :). Thanks for bringing back a good memory LOL.
Oh man!!!!

Absolutely the bomb!!! Thank you 🎉
We madethe rice but 😢with brown gravy or cream gravy. Man I miss those days.
Thanks! These recipes are so encouraging after my house needs to tighten our grocery budget this month. You make magic happen!
I've made something similar with chicken. I actually save cut up pieces of cooked turkey when I buy extra around Thanksgiving in sandwich bags in the freezer to add to things like this, also soups and whatnot. I really enjoy these videos
This feels like a jacket potato, just kind of splayed out. I love it!
Thank you for not only showing us low price meals but also nutritional meals 😊❤
