This would have been wonderful for me to learn from fifteen years ago when I took a stab (no pun intended) at cutting up half a pig. My mom was going to help but chickened out. In the end I abandoned my how to book and just followed the bone and separated the meat from the bone. It was the most exhausting thing I have ever done. It took me roughly 5 hours. Mom was good at sharpening the knife and wrapping the meat so she redeemed herself that way. The 1/2 carcass was a gift from a neighbour so it would have been disrespectful not to be grateful. It was delicious meat. All that said, I don't think I would do it again.
