When opening old or damaged cans, open them slowly and look/listen carefully. A release of vacuum will make a "whoosh" sound as the can cracks, and you may be able to see the lid pop out ever so slightly as this happens. Pressure, on the other hand, will make a "psshhh" sound as the can cracks, and you may see the lid sink in slightly as the pressure releases. The former is what you want, as a well sealed can will be under a slight vacuum. If *nothing* happens as the can cracks, the seal was likely compromised, and you should toss it. If the latter (pressure) happens, DEFINITELY toss it, regardless of whether or not it's damaged or expired, as this is the only sign of botulism. Note: the above applies to food cans only. Drink cans are very thin and are supposed to be under pressure to aid their structural integrity.
if food begins to create methods of self defence or to grow a furry coat of mould to keep itself warm it should either begin to pay rent or it needs to move out. Note to self- maybe time to clean out the pantry.
Aaand this is why when we, in the grocery store, find a can where there has been an issue, we’re supposed to throw out the entire tray. Not just one can. This is because usually the tray is manufactured together and therefore if there’s an issue with one there’s probably an issue with all of them. It’s a huge waste of food but legally I, as the store manager, can’t change anything. I don’t want to be sued, that is expensive and annoying.
My junior high school Home EC teacher back in the early-1980’s drilled into us how deadly canning could be due to botulism. She was extremely graphic in this, to the point she scared me off canning to this day. Freezing only. The neurologist I see recommended Botox injections for my intractable migraines. Despite the desperation of wanting relief, my brain almost fell out at the thought of Botulinum toxin being used. He asked what I was afraid of with it and I simply said “Mrs. Shultz.” I’ve been getting injections for eight years now and it has helped quite a bit with my migraines. I still have a tiny mental scream each time I go in, though, especially when they hand me the form saying I understand the risks involved.
Unfortunately, the Make America Healthy Again movement is getting people to drink deadly bacteria through raw milk by convincing people that pasteurization uses chemicals. Pasteurization just uses heat and sometimes pressure to kill things like salmonella, botulism, and bird flu.
Toxic is related to dose. I always find that fascinating that we can be exposed to things that sound deadly with no ill effects as long as the dose is small enough
Indeed, I was once given atropine to bring me out of a spasm which was choking me to death. That substance is derived from the deadly belladonna/nightshade plant. There's so many other examples in medicine such as digoxin which comes from the foxglove, etc. Fascinating stuff.
The other day I was watching a video that recommended eating green potatoes. And the justification was.. "I ate them for 3 days and was ok." *rolling eyes*

Botulism paralyses the muscles but leaves the brain unaffected. So when you stop breathing you are fully conscious and can feel yourself suffocating. It is not a nice way to go at all. I experienced total paralysis while awake after a medical procedure. It only lasted a few seconds and I was assured I was in no danger, but they were the longest 15 seconds or so of my entire life.
That's why if I ever open a can and a lot of air rushes out I just throw it away. I've had cans actually spray a little liquid when I puncture the lid and I immediately washed my hands and threw the can away. Always better to be safe than dead
Nearly died for this as an infant, “infant botulism” took me out as a 4 month old stayed is hospital until I was 8 months old. My mom gave me tainted homemade jam.
My son had at it 5 months. We don't know where he got it from; we were careful about keeping him away from honey. Thankfully, the children's hospital figured it out within a few hours, and he was out of the ICU within a week. He had a long recovery; he basically went back to being a newborn, but 2 years later he's walking, jumping, climbing, and fighting with his brother
The author left out that botulism is one of the main reasons for the addition of sodium nitrate to processed meat and from this nitrates develop which are carcinogenic. It is my understanding that it is the most effective preservative to prevent botulism from growing.
@@MarianneKat Can be, but dying from botulism is a lot more possible. BTW, my husband had cancer in 2014 but thanks to today's medical knowledge and an amazing surgeon he is now cancer free, so I know what having cancer can look like. Botulism is still way more scary though

When I was interning we had a trauma alert for a 4 month old pediatric patient. The baby had a hard time breathing after the mom made up her bottle. The formula was contaminated with botulism. The baby when they arrived on the helicopter pad was floppy. Only time I've seen it was when we were saying goodbye to my grandparents dog who had just died. He was a limp noodle. The baby was just as limp and still alive. Essentially with botulism you suffocate and become limp as a noodle and are dead weight. 😢 Baby was okay though. Our hospital can test for botulism and the CDC flew in an antidote and the baby was getting synthetic acetylcholine to protect her motor nerves.
@bmstylee I once ate a Twix bar that fell behind a cupboard in my kitchen. It was there for a year. I never tried to get it, but never forgot it. here are some migraine fun facts: - migraine is more rare with men than women. in order to avoid migraine, you couldve tried being born a man! - while migraines lesser known among men, they have cluster headaches instead. you can tell that it's more common among them than women due to it's much manlier name! - the best known cure for migraines known to man is decapitation or the more clinical process of cranium amputation. literally worked in every single case to date! hope this helped (laughing is supposed to be the best medicine)
I saw this on the RUclips channel "Chubby Emu" (it's actually a toxicologist!) who presents various, real-life cases. One story was an off-duty chef, treating himself to some nachos at a local convenience store. Dude caught botulism and died. I'm never going to get THOSE again!
Tyndallization is basically a staggered pasteurization easily done at home. You do not need a pressure cooker, just put jars in a pot (on a dishcloth, not touching each other etc) cover at least 4/5 height with water, bring to a boil, then keep it at 100C for 90 min, let the jars cool down. Next day heat up, keep at 100C for 60 min, 3rd day 45 min. Stored in a cool, dark, well aired place will be safe to eat for years, this process kills both bacteria and spores
That's why the Ball Blue Book gets updated often...and in the US, the FDA monitors the LACF (low acid canned food) process of commercial food producers. Companies have to document everything and prove that everything canned went through a sufficient cook process through the retorts.
Cooking only kills bacteria and prevents the food a little from getting bad later. If the food is already bad, the toxin is already present and will not be destroyed by heat. Uncooked soup can contain other filthy bacteria. You don't know if everone in the factory did wash their hands after being on the toilet.
I remember researching this in biology once as a class project, i had a book on the side that also basically explained every way you can set up a glass and "harvest" it. Terrifyingly effective if you have a small lab. (I did not but my teacher had the basics) Although, it was like a by chance experiment. The bacteriums spores like you said is in honey, but transfering it was a whole different story.

7:50 Most commersial foods preserved in glass jars have a lid designed to click if you press it if the seal has been broken (a "button lid"). If you haven't deliberately opened the jar and the lid can click, throw it away; the seal has either failed or someone has possibly opened it and tampered with it. If you forgot to check, if it is very easy to open and doesn't click when the lid starts to move this is one to throw away A low pressure forms inside the jar when it cools and steam condenses in the headspace. This is what makes the lid annoyingly hard to open the first time it is opened; it's pretty close to a full vacuum in there. As long as it is sealed the lid is pulled inward by the low pressure and this keeps the "button" on the lid pressed in so it cannot make a clicking noise when you press it. This also has the atmosphere outside the lid pushing the gasket material down on the glass sealing it tighter; without this effect the lid would have to generate much larger forces on the threads to hold it down and ensure the gasket is compressed. On an 8 cm lid there's almost 50 kg pressing it down until you unseal it. This is how those jar openers for the elderly work; they bend the lid slightly and let air in using a kind of bottle-opener-like design, but don't bend it so much to mess up the lid, and once it goes "psshhs" it's suddenly super-easy to open.
My mom had botulism, the c-diff one, and she was sick for at least 8 months. The doctors said that if the treatment she was on didn't work she could very well die, it was scarry. Truly I wouldn't wish that upon anyone. She got it from a not properly prepared roast beef meal from a restaurant in my town. Many other people got food poisoning from that meal as well but I guess she got the worst bit.
High rates of food contamination could return to the United States as the government rolls back critical food safety standards. Promoting unpasteurized milk and weakening well-established protocols increases the risk of dangerous foodborne illnesses like E. coli, Salmonella, and Listeria monocytogenes. One alarming threat is the potential resurgence of botulism, a rare but deadly illness caused by Clostridium botulinum toxins, which safety regulations have largely kept at bay. Reduced inspections and pathogen controls could also lead to more frequent outbreaks, endangering public health. Maintaining strict food safety measures is essential to protect consumers and prevent a resurgence of preventable illnesses.

The joke in Monty Python's The Meaning Of Life, when Death says the salmon mousse made of tinned salmon had killed the guests, at a dinner party at a remote house, was based on a real food scandal in the UK. A brand of tinned salmon had to withdraw a batch of tins, because several people died from botulism. The result of this was stronger rules on tinned fish in the UK. Nasty, but true story that gave rise to an off colour film joke.

So interesting that a treatment for human botulism cases is horse antibodies because it is rare but devastating for horses - just like people, the first symptoms are few and mild and escalate quickly so even supportive care is difficult to administer in time. Botulism is something I worry about with my horses because there’s nothing I can do.

I don't know what kind of food poisoning that was but I've never heard of anyone else getting it. I also threw up a lot.
Canned goods with a ph below 4,6 are less likely to have botulism. The bacteria do not thrive in acidic anaerobic environments. But anything above 4,6 should be pressure cooked at 120°C or cooked at 100°C twice within 48 hours to kill the spores.
Like those from Netto in the old days, bulging cans of soup and 2p baked beans. Never keep canned food indefinitely. Ageing ingredients encourage botulism.

@@hellsHeRo-r4i2y triptans are a rescue med that shouldnt be used daily where botox is a preventive medication you take regularly. if you use triptans daily (which is hard because insurance only covers 12 pills per month) you run the risk of rebound/daily migraines.
i know because i had them lol until i went through lupron and quitting birth control/hormones and got on trazadone and baclofen as daily preventives that i got the daily migraines under control to be like erin; more weather related or if i stack a bunch of triggers like staying up late, not getting full night sleep and then skipping meals.
i actually almost started botox injections as my next steps but stopping hormones and going on lupron helped so much i didnt need to try the botox (nice to know its still an option if they get bad again)

Saving lives, not wasting food.
Wouldn't it be any cans with the same batch code? Also it's wild that you'd be personally responsible.
I wish. Every store I go into there’s always bashed and damaged cans on the shelves. We need to be more diligent!
As someone who lived with a depression era grandma in the 80s I know swelled cans go in the garbage and potato salad goes in the fridge.
Unfortunately, the Make America Healthy Again movement is getting people to drink deadly bacteria through raw milk by convincing people that pasteurization uses chemicals. Pasteurization just uses heat and sometimes pressure to kill things like salmonella, botulism, and bird flu.
I love how potent this stuff is. The deadliest substance on earth and yet its everywhere and somehow people rarely die from it. Neat stuff!
Toxic is related to dose. I always find that fascinating that we can be exposed to things that sound deadly with no ill effects as long as the dose is small enough
1 to 2 nanograms per kg is lethal. The most toxic substance available.
Indeed, I was once given atropine to bring me out of a spasm which was choking me to death. That substance is derived from the deadly belladonna/nightshade plant. There's so many other examples in medicine such as digoxin which comes from the foxglove, etc. Fascinating stuff.
Micrograms and nanograms are not like milligrams at all 😅
The other day I was watching a video that recommended eating green potatoes. And the justification was.. "I ate them for 3 days and was ok." *rolling eyes*
@@Christopher-b1p As a teenage girl I once cooked sprouted potatoes. I peeled them, removed the sprouts and ate the potatoes. About 20 minutes later I couldn't decide whether to sit on the toilet bowl or kneel down in front of it.

Baby was okay though. Our hospital can test for botulism and the CDC flew in an antidote and the baby was getting synthetic acetylcholine to protect her motor nerves.

- migraine is more rare with men than women. in order to avoid migraine, you couldve tried being born a man!
- while migraines lesser known among men, they have cluster headaches instead. you can tell that it's more common among them than women due to it's much manlier name!
- the best known cure for migraines known to man is decapitation or the more clinical process of cranium amputation. literally worked in every single case to date!

Listening to this while eating my lunch of canned chili...
I get botox and phenol shots in my left arm for spasticity every 3 months. It works pretty well and reduces the tremors.

That's why the Ball Blue Book gets updated often...and in the US, the FDA monitors the LACF (low acid canned food) process of commercial food producers. Companies have to document everything and prove that everything canned went through a sufficient cook process through the retorts.
The dyslexic’s version of that book must be wild!
as an 80kids born in the era of Mr. Yuk I remember being told never to eat uncooked soups out of the can cause it could kill you, #GenX
Cooking the soup would not affect the the toxin, only kill the bacteria.
The teenagers...they're souping! #SNL
Botox is very unstable under light and oxygen, luckily this toxin is horrible for weaponization. Rest easy if that worried you.

7:50 Most commersial foods preserved in glass jars have a lid designed to click if you press it if the seal has been broken (a "button lid"). If you haven't deliberately opened the jar and the lid can click, throw it away; the seal has either failed or someone has possibly opened it and tampered with it. If you forgot to check, if it is very easy to open and doesn't click when the lid starts to move this is one to throw away
A low pressure forms inside the jar when it cools and steam condenses in the headspace.

So interesting that a treatment for human botulism cases is horse antibodies because it is rare but devastating for horses - just like people, the first symptoms are few and mild and escalate quickly so even supportive care is difficult to administer in time. Botulism is something I worry about with my horses because there’s nothing I can do.

Oh hey, my sister has strabismus. Had surgery for it last year. And I get Botox for migraines every 3 months.
Canned goods with a ph below 4,6 are less likely to have botulism. The bacteria do not thrive in acidic anaerobic environments. But anything above 4,6 should be pressure cooked at 120°C or cooked at 100°C twice within 48 hours to kill the spores.
