  • Royal icing for cookies! Come with me as I prep for wedding cookies. This is a two part video. This first video will be the prep work for the icing. The second half will be the decorating itself. Watch both for the full process! Like and subscribe! Thanks for watching!
    Ingredients List
    2.2lbs powdered sugar
    3Tb meringue powder
2/3cup water (don’t use all at once)
1/4cup corn syrup (used to add shine and softness)
    1Tb vanilla extract
    1Tb butter baking emulsion
    1Tsp Americolor bright white
Place the powdered sugar and meringue powder in your mixing bowl. Using the paddle attachment, stir ingredients together on the lowest speed. While you continue on low speed, add half the water, corn syrup, vanilla, and butter emulsion. After mixing is complete, add in your white color. Be sure to scrape bowl. If you find the icing needs a bit more water to come together, you can add another teaspoon or so until all the powdered sugar is incorporated.
Once everything is incorporated nicely, you can speed mixer up to medium speed and mix it a further 1 minute. Scrape the sides of the bowl and mix a further 30 sec- 1 minute. Make sure not to mix for too long or icing can become crumbly!
If icing is too thin, add more powdered sugar and stir.
If icing is too stiff, you can add small amounts of water to thin out.
