  • Learn how to make a Caribbean style black-eyed peas soup, with step by step instructions from Gourmand Award winning cookbook author, Chris De La Rosa. Flavored with salted pig tails and a host of Caribbean herbs, this is a lovely one pot dish to enjoy on a cold winter night. Caribbean soups can be thick and full of body like most stews, but with it's own unique taste, texture and flavors.
    For this blackeye peas soup, you'll need
    1-2 lbs salted pigtails
    1 cup dried black eyed peas
    7-9 cups water (for the soup)
    1 can coconut milk (about 1 1/4 cups)
    1 carrot
    2 scallions
    1 scotch bonnet pepper
    2-3 cups diced pumpkin
    12 okra
    1/4 teaspoon black pepper
    3 allspice berries
    1 onion
    4 cloves garlic
    1 tablespoon veg oil
    2 tablespoon chopped parsley
    4 sprigs thyme
    1/2 lime for washing pig tail
    Flour Dumplings
    1 cup all purpose flour
    pinch salt
    1/4 teaspoon sugar
    1/4 cup water

    this soup brings back of my mom before she pass away, she would make a giant pot of soup with all the island vegetables... lately ive been craving chicken feet soup like crazy

    Fantastic recipe Chris. I made this for dinner today. However, 2 things i did differently: 1 - i popped the pigtail in the pressure cooker for 15 minutes, 2 - i boiled the black eye peas for 1/2 hour or so... it did cut down on the actual cooking time of the soup...

    Chris I was looking for smoked turkey legs couldn't find any so I used smoked turkey sausage! Came out great!

    That looks terrible to me but I trust your cooking so I will try lol. You haven't steered me wrong yet. Terrible is a strong word so I will calm it down a little. The pumpkin and okra lost me but I will try it as is and adjust later if I don't want certain things in it.

    Looks fab! What meat can be substituted for the salted tail? Not readily available here. Would extra or a particular seasoning be needed if so? Many thanks.

      +91cinnie smoked turkey, ham hock etc will work well.

    My worry is the slime from the okra. I love the taste but don't eat okra much because I hate the slime! Any tips for us on how to reduce that either before or during the cooking process?

      Lila W i think it is excess fat from the pig tail or coconut milk that floats to the top

      Use 2 packets of JAMON by GOYA. Gives that pork flavor without the Pork.
