Fermented Millet Porridge / Ambali / Khameer.
Nowadays Vitamin B12 deficiency and macro & micro nutrient deficiencies has become very common.
One of the reasons is the lack of a good colony of probiotic bacteria in the gut.
A simple solution is to consume fermented porridge regularly & here is the recipe on how to prepare Fermented Millet Porridge / Ambali / Khameer.
If you are diabetic or a heart patient eating fermented porridge / ambali / khameer for all 3 meals for 6 - 9 weeks will show you the change.
If you are beginning your millet journey, this would be the best way to start.

Hi,very good recipes...can we use this fermented millet for lunch and dinner .do we need to refrigerated for lunch nd dinner or we can keep outside
You can use this for lunch and please don't refrigerate the millet as it loses its properties. don't leave it till dinner, it will overferment. Best is to be eaten as breakfast.

Quick question...if you soak millets to remove phytic acid, then why use that same water for cooking? Shouldn't we discard it?

Even I was wondering about the same.
Actually in my previous millet videos, I discarded the soaked water because I also felt the same as you mentioned but a few of my viewers said its wrong, the water should be used.
I enquired about it but got mixed reviews, mostly people use it so I also used it but I am also not convinced:)

This is Little millet, Jaise jowar, bajra, ragi hota hai na vaise hi ye ek dhanya (millet) hai. quinoa nahi hai magar vaisa hi dikhta hai.

We have used the same water. But if you are new to millets or you have digestion issues, you can discard that.
