- Ron and Justine are here to EAT! Today we have a full (balanced) meal cooked from recipes dating between 1796 and 1832. Sausages fried with peas pudding & cabbage + an apple pie from America's first published cookbook. How is it? Let's try them all and give you our review 200 years later! Also, we'll chat about historical apple varities and the mystery surronding Meriwether Lewis's violent death. Last but not least Ron talks about his new flintlock pistol and reads the history for this week!

Fried cabbage is wonderful! Cabbage gets somewhat sweet when its cooked. I fry it up in a bit of oil and butter with some keilbasa, a little thinly-sliced onions, and paprika. It's a good main dish!
The reason why peas pudding was so popular in England is that until the late 1500's they didn't have potatoes, and dried peas was the starch that they ate regularly.
I did not know this. My father used to make something called peas brose (not sure of the spelling... But I'll never forget the smell 🤢😂)

They were originally grown in South America and brought to Spain by the Spanish in the 1500s. Sir Francis Drake introduced them to England after one of his voyages. In French, potatoes are called pomme de terre which translates to apples from the earth. I remember that from my school French class 50 years ago.
I am from Newfoundland , Canada. Peas Pudding is very popular . We cook it with salt beef , potatoes, carrots and turnip. Everything is cooked together. An wonderful meal.
Ooh you can't beat a bit of peas pudding. It was one of my dad's favourites. We still eat it in England to this day

I love old recipes. BTW, I right now am having put in my 1920 house new glass windows. ALL of them are wavy (the old ones). I am saving the small parts of each window, and making things out of them. I can't save all the larger parts. I have a lot of windows. At least I am saving what I can, and that's a lot of glass. The new windows will keep the house warmer in winter, and cool in the summer. I have photographed the old ones so we can see the wavyness in them. Also took photos of the sun catching the waves on the wall. I so enjoyed that! I always enjoy your stories. I also enjoy your cooking.
Our house was built in 1912 with an upper story added in 1934…. 🎉the downstairs windows ( that have not had the glass replaced) all have wavy glass. I think Merriweather Clark was killed by some unknown person.
Your dinner looks WONDERFUL! It is a supper that I make frequently…..usually with onions, stewed cabbage, Green Granny Smith or another firm cooking apples. I love watching you cook on an open fire….

I love how you young folks take interest in our American history. Food looks good also. The peas pudding reminds me of the little poem we use to jump rope to. Peas porridge hot, peas porridge cold, peas porridge in the pot nine days old.
I love that you built an oven, have you considered building a dug out cold room for pickles and jarred things as well as a smoke house for meats?

Looks like a perfect Fall meal. I cook my sausages in either cabbage or sauerkraut with onions and apples. So good!

I live in Massachusetts. I think I’ve seen those Roxbury Apples growing wild! This was a long time ago though, I’m 52, and I was a child then. Not the prettiest to look at, but that’s another thing that has changed about the food we eat now! 😉

I believe the British eat a dish called “mushy peas” which is very similar to your recipe. Lots of butter..delicious. I love the taste of cabbage fried in butter, too. Justine, you inspired me to get into the kitchen and bake a pie tonight! ❤
In fact, mushy peas are basically mashed green peas with butter & herbs whereas pease pudding is made with split yellow peas, ham, butter & herbs. 😉

love fried cabbage too! I add shredded carrot and some chopped onions. The sweetness of the carrots compliments the cabbage nicely. I use lard or bacon grease😋😊 (allergic to butter🙄)
My husband loves mushy peas being British its a must these days .The pommies love fish and chips with Mushie peas on the side and a slice of lemon.

In Newfoundland, just about everyone makes peas pudding almost every Sunday. They add Newfoundland savory to it and use yellow split peas. Yummy!
Now I'm going to have to watch a documentary about Lewis. I didn't know all of the information that you guys gave me. I love learning from you folks. It's like I'm sitting right there with you. I can't get enough. Wednesdays don't come fast enough for me.
Justine, my ancestors who came over on the Mayflower landed in 1620 so that was quite some time after they came over. But you are right, it would have surely been scary for sure.

I've been to the site where Lewis died on the Natchez Trace. It is pretty darn remote even today. I can only imagine what it was like in the early 19th century. So, if that is the case who would the witness have contacted about the incident? Or at least not very quickly. From what that Park Ranger said about the bullet hole in the back of the skull, it sure seems it's homicide.
By the way, if you ever get a chance, a drive along the Natchez Trace is fantastic. Very, very beautiful and a glimpse into how we Americans traveled all those years ago.

Peas pottage is much older than that - it was the basic food for English medieval peasants, since it was cheap, easy to make and nutritious. It was flavored, when possible, with bacon or ham.

Love this channel that I have just discovered. Btw, peas pudding is now called pease pudding in English, (I suppose to differentiate it from mushy peas) as 'peas' pudding is made with split yellow peas whereas mushy peas is made with actual fresh green peas. It's not surprising that the peas pudding tastes great with the sausages as it was generally eaten with boiled ham in the UK. I remember having to eat it as a child in the 70s & I didn't like it at all. Now I'm sure I'd love it ! Also, I agree that there is nothing unusual about this meal as most of the dishes still exist either in the UK or France & probably elsewhere in Europe. The whole meal looks delicious !
This looks so yummy and yes, like you could eat this at any time! What I found interesting is that the recipe called for you to cook the apples before you put them in the pie… I have never done that… I wonder when people stopped cooking the apples before they put them in the pie to bake…
That all looks amazing! Ron, try making your own homemade sauerkraut, and you will love it. Increadibly easy, just shredded cabbage and salt (use a natural salt not processed). You can find helpful videos on how to make it, but it's very easy. Fresh made sauerkraut is the best, and loaded with healthy probiotics. You just can't go wrong with sausages, cabbage, peas, and apples. Enjoy!
I am a sub to both channels and am still amazed of the receipts that were made back in the 1700/1800s. Justine you surely do make these meals look delightful. I love how y’all make these meals on one channel and taste test/chew and chat on this channel. Oh by the way Justine I thought the same on the peas as mashed potatoes. I don't comment often because I watch on my TV but I wanted to say that I love your channels. Also, I wanted to say I feel such a connection to Ste. Genevieve and the surrounding area as someone who is French Canadian. When I search up all the last names in my family tree the results I get are Canada, France, and the central/eastern United States. I like to think I have distant relatives around in your parts. Awesome i'm going to have to try and get those books! I made rootabgas For the, first time yesterday. Went to the farmer stand on the outskirts of town. They already had, them cubed up for you. All you had to do was boiled them. I'm getting into cooking more, and I love it! I like learning and trying different things.

I can't wait to try that apple pie recipe. I began growing apples 4 years ago and just got my first small harvest. In the coming years I expect to get more and better quality. Some of my varieties are cooking apples, old varieties, and I can't wait!
Where did you get your apple trees? I know there are a few good online nurseries that handle historic American varieties. I have to grow varieties that can handle the subtropics so that limits me to about 100 variteies.

Suggestion on historic apples..…Peter Gunnarson Rambo from Sweden brought over Rambo apple seeds in 1637 and began growing them in the Philadelphia area (New Sweden) shortly after…….Please try growing the Rambo Apple or also known as the Winter Rambo….not to be confused with the Summer Rambo from France. Winter Rambo can be purchased from a grower in NC.

I find the wonder about the mushy peas quite funny 😂 I’m an Aussie of Chilean birth/origin, and I only discovered the peas this way through my Aussie (English ancestry) husband’s grandparents, and even they weren’t fans. But my English friends visiting here told me how they missed getting mushy peas from the takeaway (takeout) shops or the fish’n’chip shops. Can’t imagine getting mushy peas from the fish n chippie! And yes very different from fresh peas.
Young fresh peas are my preference. Love those. But also I grew up eating Chilean food, and we had lentils, beans or chickpeas weekly.
I'm American but have bought canned Mushy Peas at our local grocery store from the British section and I find them weirdly sweet and not in a good way. Probably something you just ate growing up and like as that's just what they are used to. The peas used for mushy peas are a larger pea then say the split pea variety as well.
