- This lemon cream cheese roll is very beautiful and tasty. The golden brown bread is dotted with crispy crumbles and exudes a charming lemon aroma. The soft brushed bread tissue, wrapping sweet and sour cream cheese filling, is very refreshing and appetizing!
Recipe for 6 rolls
Bread Ingredients:
Bread Flour 340 g
Instant Yeast 4 g
Salt 5 g
Caster Sugar 34 g
Milk Powder 17 g
Cold Water 200 g
Unsalted Butter 34 g
Filling:
Cream Cheese 113 g
Icing Sugar 22 g
Lemon Juice 6 g
Lemon Zest 1/2 tbsp
Topping:
Cake Flour 27 g
Icing Sugar 15 g
Unsalted Butter 18 g
Lemon Zest 1/2 tsp
Preheat the oven to 375℉/190℃ 15 minutes in advance, bake at the middle rack for about 15 minutes until golden brown.
💕Tips:
1. The temperature of the softened butter is cannot be too high, it should be about 19-23°C. Take it out of the refrigerator 5-10 minutes earlier in the summer.
2. The crumbs on the bread will soften the next day. Before eating, preheat the oven to 350°F/180°C. After baking the on middle layer rack for about 5 minutes, the crumbs will become crunchy again.

When I try to roll out to reach 22-23cm, the dough (filled) keep shrinking and get so many air bubbles inside, it doesn’t looks smooth like yours. What should I do to fix this?
Maybe your dough need more time to rest after put in filling. For the air bubbles, you can pick it with a toothpick.
