Katakuri is one of those villains that deserves nothing but respect because he's an honorable warrior🗿
You can't say that about katakuri and neglect to put Kaido in there as well. He was PISSED when someone interfered with his fight against oden as well as when the cp-0 agent interfered with him and Luffy. I don't really care for Kaito but he certainly fits this characterization

Luffy respects most of his villains. The only ones he doesn’t really respect are those who genuinely prey on innocent people. Katakuri was more of just “she’s not just my boss, she’s my mother, I have to do everything I can to protect my familly.” It’s called a warriors respect.

Katakuri is the one guy who really respects luffy, even more than his crew
So is Koby,Smoker, Crocodile, San(3), Broggi, Bartolomeo and the straw hat alliance, Pudding, Vivi, Shirahoshi, Trafalgar,Whitebeard and his crew, Hawk eye, Buggy, Senor Pink, most of the gladiators and citizens in Dressrosa, all Wano samurai, all the minks even Hancock and Shanks that have undisputed love for him, first had to have a taste of his character and respected him for it.
And most people that respect Luffy, started out as his opponents set out by the same corrupt system that governs the world to stand on his way.
Also he fell on his back deliberately to show that he had truly been defeated and had accepted it (if you don't know for the first like 10 episodes of the fight him and his siblings talked about how he never let's his back touch the ground and that was a symbol of him not being defeated ever which is why the scene has a big effect to luffy )
Katakuri is the best example of a brother and of someone who care more for other then for himself
