High Protein Un-Stuffed pepper Casserole

    Ingredients
    4-5 bell peppers, diced
    olive oil
    2 pounds (900g) ground beef
    6 garlic cloves, grated
    15oz (425g) crushed tomatoes or sauce
    1 teaspoon salt or to taste
    freshly cracked black pepper, to taste
    1/4 teaspoon ground cinnamon
    2 teaspoons crushed dried oregano
    optional: crushed red pepper flakes
    2 cups shredded cheese: mozzarella, muenster, cheddar or your fave
    1-2 teaspoons finely chopped parsley
    tzatziki for serving
    Instructions
    Preheat oven to 400 °F, 200 °C.
    In an oven-proof skillet, cook the onion and olive oil over medium heat until soft and golden. About 8 minutes. Add the garlic and warm through until fragrant. About 30 seconds.
    Brown the Beef: Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 7-8 minutes. Drain excess fat if needed.
    Add the Flavor: Stir in the crushed tomatoes, salt, black pepper, cinnamon, oregano, and red pepper flakes (if using). Bring to a boil and remove from the heat.
    Top with cheese and bake for 15-20 minutes
    Finish & Serve: Garnish with chopped parsley and serve warm with tzatziki on the side. Enjoy!
    Notes
    For extra depth of flavor, let the stew simmer for an additional 10 minutes.
    Make it on the stovetop instead of the oven: once the peppers are in the pan, bring to a boil and reduce the heat to medium. Simmer for 15-20 minutes, stirring occasionally. Add the cheese and let it melt for 2-3 minutes. Garnish with parsley and serve.
    Want it spicier? Add more crushed red pepper flakes or a pinch of cayenne.
    Make it low-fat: Swap ground beef for ground turkey or chicken.
    Meal prep tip: Store leftovers in an airtight container in the fridge for up to 4 days. Reheat on the stove or in the microwave before serving.

    Just yesterday I made my Unstuffed Cabbage casserole, based on my families Hungarian Stuffed Cabbage recipe. So much easier and tastes just as good. I haven't done it with peppers yet, but I will! The only difference between your recipe and mine is the omission of rice and the addition of oregano and cheese. Thanks Dimitra!

      Same here. Unless needing more individualized portions for a party, skillets and casseroles work wonderfully and are so easily customizable. Try a hybrid of the peppers with cabbage some time - they make a delicious combo.

      That sounds like a delicious combination! The sweetness of butternut squash would balance beautifully with the savory stuffed peppers. Do you roast it on the side, or do you add it to the filling?

      @DimitrasDishes I simply boil and mash as a side but it's flexible. Squash and tomato sauce. Who knew?!

    This is a good recipe. We made it and it turned out really good. Just for your info, in the written recipe under "instructions" bell peppers are not mentioned

    Looks great. I made it with vegan "ground" beef and it turned out well. The printed recipe doesn't have "onion" on the ingredient list, and the directions don't mention how and when to add the peppers. I used the printed recipe and the video to get it right...
