MEXICAN CHICKEN CASSEROLE
1 package of chicken breast
1 package of cheese
1 package of tortillas
Taco seasoning
1 jar of salsa or picante
Sour cream for topping (optional)
DIRECTIONS:
1. Cook your chicken all the way through and add your taco seasoning packet at the end.
2. Once it is done cooking shred the chicken.
3. Layer your tortillas, cheese, chicken, and salsa kind of like lasagna
1. Tortillas
2. Salsa
3. Cheese
4. Chicken
5. Repeat steps 1-4 besides the chicken.
I baked this at 400F for about 30 minutes. You will know it is ready when the cheese starts to turn a little brown and has melted through well. The tortillas will be softer as well. This would be a great freezer meal! You could make some ahead of time and throw them in the oven one evening for dinner and you’re good in about 45 minutes to an hour!
