When guards panic (exclamation mark over head) from excessive shots fired at them - usually a SMG - and you quickly move from your firing position without being seen, they won't recognize you as you run past because they're looking for the 'shooter'. It's very situational and not as consistent as this might seem.
In hitman, you have an unlimited inventory so you can pick up and store small items from the entire map and the devs probably made it that if you're in your inventory, the game "pauses" for easier gameplay purposes and less tension
I'm not impressed by him doing the trilogy in minutes I'm blown away from how fast he navigates that menu screen I takes me 30 minutes to prep a mission!
Is it still possible to do that start in Dubai or some patch canceled it? I tried a lot of times but couldn't pull it off without being detect and I'm wandereing if that's because I'm bad at it or because it's impossible anymore.

As long as you're not using the Ghost/Arctic/Ruby Rude, a shot in the hand won't kill them, and if you're far enough away from who you're shooting you can just bodyshot them without killing them.
