He told me they were regulars, what they liked to order, and that the President and First Lady were both great people. As I recall, our waiter was an immigrant from a Spanish speaking country. It was not unusual for ranchers and farmers to have undocumented workers. They knew they where undocumented and it was ok because their workers became their allies and friends. The same with the blacks. The ones they knew and developed relationships with where ok. When speaking of the ones they did not know, those where the bad ones. There is rampant racism in Texas. To deny it is to put a barrier to resolution.

My family and I went to the Bush library when we were in Dallas and ate in the restaurant there. I was talking to our waiter about his job and if the Bush’s eat at the restaurant. He was such a great guy and told us some stories and entertained our curiosity for a few minutes. He told me they were regulars, what they liked to order, and that the President and First Lady were both great people. As I recall, our waiter was an immigrant from a Spanish speaking country. I wonder if his portrait might be in the book.
