I always put the noodles first, I find that if you put the seasoning package first, the flavor doesn't stick on the noodles as much as if you do it after.
I've watched a few of your videos after seeing your kimchi jjigae short. I love that dish and was looking for alternate recipes, yours is the best of the best I've found ( I add jalapeños though because I also love spicy ) On to the ramen layering question. I layer chopped green onion, baby spinach and noodles. Then add packet and pour boiling water over and cover for about 5 minutes, then add fresh cracked black pepper. My preferred ramen though is mamas spicy pork, it's always sold out around these parts while others sit on the shelf, so I know I'm not the only one.
I put the seasoning first because i want to shock the noodles with already flavoured water and I use lesser water to intensify the flavour. I cook the noodles for 3 mins on high heat, and then turn off the heat and let the residual heat continue cooking it, even after putting it in the bowl because I like them noodles chewy. With the egg, I make sure I don't break the yolk into the soup because it changes the flavour profile, so make sure the yolk stays intact while in the soup !

This isn't my account its my son's mothers lol but growing up poor and with strict utilities and someone who didn't like to do dishes, I would always add my seasoning packet to my bowl before pouring the noodles in first then the right amount of water you like, after I could just rinse my pan and use later, father than having to fully wash the oils and other stuff out of it

I did this with 1 egg a brick of nissin noodles with half the chicken seasoning packet 1 clove garlic and added black pepper to taste...was yummy and creamy and didn't put too much water so was nice and thick..I don't like spicy so this came out really good will make again

l put the seasoning and veggie packs 1st then sometimes add fresh veggies like carrot,thick cut cucumber then add the noodles and just when it be almost done l add the egg then pour the ramyun over bite sized pieces of raw beef

I always add more ingredients so its soup package first for me. @chefchrischo try adding american cheese with the egg yolk still intact. Yolk on top of noodle and cheese over egg yolk. Enjoy.
Noodles get cooked first then once it’s cooked I transfer to a bowl take some of the starch water out add the seasoning and add the starch water back for optimal spice.

The best way to make instant ramen is to put the flavour bases straight into the bowl and pour clean hot water over it, just like they would at a ramen shop, then put the cooked noodles in the bowl, then toppings.
i always find that shin ramyun overcooks real easy compared to other instant noodles so i always make sure to stop cooking the noodles 2 minutes earlier. it continues to finish cooking in the broth
