I just cooked something similar to yours two days ago. It’s my dad’s recipe, but not in curry sauce. He cooked this dish in tomatoes sauce, 48 years ago. Always love it. Yesterday I modified a little. Besides potato and onions, I add nopales, carrots and celery. So good. Definitely will tries your recipe too

Hi Fannecake. Can but actually we did that in the first few tries and realised that the luncheon meat ended up not being crispy at all so we decided to show you all the shortcut way. Extra step to crisp up the luncheon meat in our opinion but if you don’t mind that extra step, yes certainly you can. Happy cooking!
