  • One-pan baked lemon & garlic chicken
    Serves 4 Prep 5 mins Cooking 10 mins
    3 tsp olive oil
    500g Coles RSPCA Approved Chicken Leg Fillets (available at deli counter stores only) or Chicken Thigh Cutlets
    2 tsp minced garlic
    1 lemon, thinly sliced
    ½ x 500g pkt Coles Frozen Cauliflower & Broccoli mix
    1. Preheat oven to 200°C. Heat the oil in a large ovenproof frying pan over high heat. Cook the chicken for 3 mins each side or until browned all over. Add the garlic and lemon. Season.
    2. Cover and bake for 10 mins. Add vegetables to the pan and cover. Bake for a further 10 mins or until chicken is cooked through. Season.
    3. Divide the chicken mixture among plates to serve.
