The recipe features moist duck wrapped in a blanket of mashed taro root. The whole thing then gets deep-fried to provide flavor and crunchiness. The nuttiness lent by the mashed taro gives an extra layer of flavor to the boneless duck. It's crispy on the outside and soft on the inside that melts in your mouth.

It's funny cause a lot of Chinese have a negative impression on Western food being unhealthy. Meanwhile Chinese restaurant food is really unhealthy as well. Truth is neither Chinese or Westerners eat like this at home.
I tried that dish in a restaurant one day, and no kidding, the duck meat is so tender it literally melted, whoever invented that is a genius
Feel like to clarify something. The "white wine" chef uses is not the wine from white grapes, but Chinese white wine made with crops (mostly rice).

Robi Esse Actually depending on different styles and genres the technique varies a lot. And not every dish is fried. There should be some purposes that the dish is chosen to be fried, for example to make the meat tender and juicy inside crispy outside.

Wok stoves need to have water running over the surface to keep them from overheating and warping.. Standard wok stoves use 1.2 liters (40 ounces) per minute. The new "waterless" wok stoves use 90% less. Chinese restaurants use vastly more water than any other restaurant so their water bill is very high.

All wok stoves need running water to keep them from buckling.
