Excellent explanation and demonstration of "Lip-on" (often printed LIPON) that you see on grocery store packaged rib-eye steaks. "Lip off" is -- wrongly! -- considered "higher quality" because the so-called "lip" has been removed. In this video I learned that what they call the lip is one of my favorite parts of the steak!! When the lip is not there I don't buy it!
