Thank you SOOO Much for this! I have recently found out the hard way (after 3 failed attempts!) that you cant just swap out normal flour for gluten free, and that something like Xanthan Gum is necessary! I had been tearing my little remaining hair out! 🤣

I always thought you're supposed to beat for longer and leave out for a while to help the elasticity form like it is in gluten. Something to help with the texture at the end?
Whenever i made GF/DF cake with jam it always soaks through the bottom and top layer of cake! last time i tried added a layer of buttercream on both sides of cake and then adding the jam… still happened! any tips?? and yes i made sure the butter cream was set and placed the cake in the fridge to chill the jam but it keeps happening!

Try lemon curd mixed into double cream (it will automatically thicken as you mix the curd through) - it’s divine!

I used cold pressed rapeseed oil it worked wonders
