Adam’s Onion Casserole

  • My husband used to make this Onion Casserole to take to work and it became a highly requested dish. It is so simple and delicious that makes a great side dish for any occasion.

    Onion Casserole
    3 to 4 large sweet Vidalia onions
    1 (7.75 oz.) bag of Snyders barbecue potato chips
    2 cans cream of mushroom soup
    3 cups shredded sharp cheddar cheese
    Instructions
    Peel onions and slice as thin as possible. Place half of sliced onions in the bottom of a greased 9x13 baking dish. Crush potato chips and pour half on top of onions. Carefully spread one can of soup over chips. Sprinkle half of cheese over soup. Repeat layers ending with cheese. Cover and bake for 45 minutes in a 350 degree oven.

    Don’t think we have that brand of potato chips here in Texas, but I think I will still make this. Looks really good.

    This looks so different than anything I've ever seen!😋
    But I can see how a lot of people would like it!😘
    Onions are something I don't eat because of the texture. I don't eat cooked tomatoes either.
    I like the flavor of onions and will use onion powder. Often when my sister and I are cooking, we'll leave the onions in big chunks and then she can pick them out and I can avoid them.☺️
    I'll use tomato sauce and even tomato paste to get the flavor. If we use Rotel, we'll blend it before adding it to a dish.
    We all have these little idiosyncracies about certain things.😉
    If I make a big pot of spaghetti sauce, I'll often use a can of tomato soup and it cuts down the acidity in the dish and also helps those who get heartburn from tomato based foods, especially at night. It also makes a creamier base for the sauce.😚
    I probably won't make this one because of the onions and I don't feel the barbecue chips would hide the texture of the onions.😬

    Must say, a different combination. If you dip your spoon or knife in a warm glass of water before you go to spread the soup, it should spread easier. Also, if you spray your foil before covering the dish to bake, it shouldn't stick to the cheese. I like your new mini makeover.
