I wonder which ending is canon. Yet again, each one can be considered 'canon' since each experience is completely separate from one another. This actually kind of makes me wonder... what would a Jackbox game look like if each new game was impacted by the last game, even if you quit out of the game and come back in under new names.
The normal ending is probably the canon one. After Sheriff escapes, the Quiz Killer blows up the Murder Hotel and disappears. The different endings are probably just there to get a laugh out of anyone playing. (I picked Sheriff as the escaping doll here, because most of the community has collectively agreed that Sheriff is, canonically, the one who escapes.)
