I'll have to look for the butterscotch chips - love butterscotch. I may try the chix dish next week too - don't have the corn tortillas.. I halve everything you do as it's just me and it looks easy to reduce. I didn't reduce the blueberry pancake bake the first time - that's when I learned how good it tasted heated after being frozen.. That fajita casserole looks delicious! Sometimes when I cook with zucchini in a casserole I find it lets out a lot of liquid while it cooks and makes things watery. Did you find that to be the case with this casserole? If so, I'm thinking I might substitute corn. After seeing Jody's reaction to the cupcakes, I HAVE to make them! hahaha
I know exactly what you mean, but no, this one wasn't watery. I would highly recommend reheating in the convection oven or something to crisp up the tortillas. Or even cook them first and then just set them aside and don't put in the fridge. YES, those muffins were sooo good!! Can't believe how much the butterscotch melted down in it with just using 6 on each one!!

Can you use something else in place of the 2 over ripe bananas, like applesauce or pumpkin puree or anything else? If you can what is the substitution and amount for banana replacement. Sometimes I don’t have over ripe bananas on hand. Thank you
Yes, I have heard some people say they use about 1/3 to 1/2 cup of unsweetened applesauce and it works well. I imagine the pumpkin would work just as well too

I was at the salon under the dryer. Popped onto RUclips and I got confused bc it said u were “live”’so I thought I’d say hi. Now I need to start it from the beginning so I can see you make breakfast!

Oh I wish my husband had better taste buds so he can react like that when he tastes the food(made WW way). But he has been a smoker since he was 10 or 12 years old and he gets mad when I tell him his taste buds are bad because o f smoking. He says stuff is bland(he puts tons of salt on his food before he even tastes it or he will put tons of sugar on practically everything even in orange juice)and he won't try stuff that is sugar free or any way to eat healthy, but he has started eating vegetables and fruit, but he always wants to put sauces or whatever that is not good for you. He is so stubborn, but we have been together for 33 years, married for 31 years, so I usually don't, what is the word, "nag" him. His(Jerry, my husband) 3 sisters pretty much do that(he is an only son, spoiled like my father, Jerry, same name as my husband, was being the only son with 2 sisters). I could write a book, oh wait my sister is writing a book(fantasy) based on us 3 sisters. But, anyway getting off subject of your meal prep, the muffins look great(with your husband expression) and the fajita casserole looks good. I have steak fajitas left and I think my husband would eat that if I put regular cheese in it(cabot sharp cheddar). Great video considering how you felt, you have alot of get up and go.

I add maple extract to my pancake batter. My mom always made her own syrup also.
