You can shank someone with a shank, and you can shank someone with a shiv, but you’d never shiv someone with anything. Unless “shiv me” was being used as shorthand for “pass me the shiv”, the same way “beer me” means “pass me the beer”.

For example, a razorblade affixed to a handle of some sort which isn't ideal for stabbing, but slicing. Whereas I've known a shank as a stabbing weapon, like a sharpened toothbrush or a piece of metal with a point to it. Hope that provides clarification!
