And he was doing nothing just sitting on his phone. The owner said just clean and you're out by the end of the day. I said nah, I'll clean to help out the cooks before service and left after that. Then I heard the owner had to be the KP for the rest of the night. Lol.
Done this whilst working as a Ward Host in a hospital..had to wash the dishes of all the patients whilst also keeping on a deadline to get it all done...Fun times lol
in school we had two separate jobs for dishes and and one for pots and pans and i always loved the dishes part but the pots and pans was so rough especially at the end of the day when everyone is cleaning up and it was so close to going home haha. never forget the three sinks to this day wash rinse sanitize :D

Now that's an odd way of doing dishes. Why do you prewash everything with soapy water and a sponge, that's not needed at all. Just a quick spray off with the shower is enough. There's detergent in the dishwasher too. So it's a double waste of detergent and extra handling. You won't be able to do the dishes from 150 guests that way. The table for clean dishes doesn't need to be dried off after each clean rack which has stood on it. Once a day at the end of the shift is enough. The excess water will automatically run back inside the dishwasher. That other garbage bin does not belong at the clean side of the dishwasher, better locate it next of the other one. It saves you walking to it too. Washing cutlery can be done much easier and better. Don't soak them in soapy water, spread them on the fine maze rack and run through, then take that blue rack which stands on the dirty side and put all the cutlery still being wet upright in it, handles down, run them through another time and then never dry them off but leave air drying. If you use soapy water to pre wash, the soap will deactivate the detergent in the dishwasher. That soap is meant for cleaning surfaces and floors or for items that does not fit into the dishwasher. I recommend you to use a strainer on top of the sink you're rinsing off dishes in to avoid the sewer getting clogged. A 1/1 Gastronorm container with holes in it, usually meant to steam veggies will probably work fine for that purpose. Or you ask your boss to order a special one from Winterhalter, the supplier of the dish washer. I wish you good luck trying out these great hints, which will make your job a lot easier.

I've been a kp well over a year at a fast food restaurant and now and the head chef at my current place has such an unbreakable, stupid EGO.. he treats his staff like shit.. never appreciates hard work.. and for example; sends the morning kp home early so kps a shit tip and stacked to the brim with shit when I arrive to do the afternoon service.. 🤣 Respect! 👍👏
Sure, just pay attention, always ask if there's anything to do, be willing to learn, never be late, and remember, there's always something to do in the kitchen 👌😃👍
Can't mess it up. Always work hard, be punctual (even if others don't do so), if you think there is nothing to do always ask the chef if they have any jobs for you, they will love you 👌😉👍

It's mandatory to have very hot soapy water when you wash dishes at restaurants or wherever there is to where you wash dishes you need gloves if you can't handle the heat

Yeah nah I wash dishes as a main job and as soon as you touch the sprayer you sanitize and wash your hands
