Acually if you have a total mass of 100g, you have 99g of water and 1g of xhanthan. It is definitely not 100g water for 1g xanthan. If you do this, you have slightely less xanthan

1% means around 2.5g for 250ml
How do you measure 1%? Lets say for 100ml of water, how many ml or grams do i need if 1% is needed, or lets say per liter, how many is 1%?
1% of 1L is 10ml or 10gr for water, for 100ml is 1ml
