The ladies at my Bible study loved the English muffin breakfast cups. I used bacon (because that is their favorite meat) but no matter what you use these are fabulous. Thank you so much for the idea.
My Mom would take a can of corned beef hash. Put it under the boiler, then let it brown. Put your English muffins under broiler and toast. Take out and butter the English muffins. Put your browned corned beef hash on them. Place slice of American cheese on one side and slice of tomato on other side. Broiler melt cheese and tomato slightly. Put together and enjoy! I add mayo too! I am 69 and make this for my family too! !

Sounds good except for the canned corned beef hash. The beef used to making the typical canned corned beef hash comes from the cow's hooves, lower legs, lower tail, butt hole, head and ears and whatever they sweep up off the floor. They grind it all up, throw it into a big vat with corns of salt and voila. . . corned beef (ugh!). Better to buy corned beef, cook it, chop it finely and add it to finely chopped potatoes to make your own hash. You can buy corned beef when it goes on sale and then can a bunch of it. You will then have it ready for hash, sandwiches, or as your supper protein entree. You can then leave the manufacturer's canned hash in your pantry for when the apocalypse arrives. As bad as it is, it will still be better than having to eat your neighbor (I'm guessing. . . maybe not).
My favorite thing to make with English muffins is croutons. Butter one side and sprinkle with garlic powder and Parmesan cheese. Cut into square pieces and bake. Toss during baking. Yum…..the best croutons.

We made our children cook supper alone on Wednesday! No sports and rotated once in high school! So the English muffin was a favorite go to! They could not cook the same thing until the next quarter! I taught them to cook in large electric skillet! I didn't want them to go hungry and if you have no stove you can always cook in electric skillet! That might not be the best tho, my son snuck one in his dorm room! 😂

I love English muffins I use to get them at shop and save here 10 @ 10 when Walmart came it closed all of them in this area about 7 years ago it wouldn't matter much though with today's economy they use to have the best deals though a lot of the 10 @ 10 all through out the store.. There are no store's like that around here anymore Walmart closed them all down.. We do have a an Aldies and a Rulers but I don't like a lot of the things in there for instance their ice-cream at Rulers is artificially flavored.. Their tea bag's are kinda gross too.. But for can goods and the basics they are not shabby.. Aldies has better produce than Rulers they don't have but a few different fruits and a few different vegetables. and not the best quality either. Hi Ang. It never dawned on me to make garlic bread out of English muffins. I really like Enlish muffins for making breakfast sandwiches, but, as you proved here today, they are so versitile for so many more things. I hope you are staying cool and enjoying your day, dear lady.
I think cooked sausage, like Jimmy Dean’s, would also be delicious in the breakfast muffins! We like a little spice. So I would also add some red pepper flakes! 😊

Maria - Go to 10:05 for English Muffin French Toast. Make the following changes: (1) use a mixing bowl to whisk ingredients (2) although Ang make 8 pieces, I'd prefer that you make 12 (i.e., using 6 whole muffins) so you will need to increase her recipe by 50% and the following instructions are based on that increase (3) use 6 egg whites and one whole egg (with the yolk), vigorously whisk the eggs first and then add room-temp milk and other ingredients (4) instead of brown sugar use 3T of WARMED honey and 1T of molasses (5) once everything is blended, pour into whichever dish you wish to use to soak the muffins (6) use a fork to split the muffins, not a knife (7) thoroughly toast the muffins before soaking them (8) it's too much trouble to get out the griddle so just use a frying pan and fry a few at a time or bake them (9) and, of course, unlike Ang, don't forget to use a hair net.

We used to make pizza ones. Just put whatever you like on your pizza on your muffins and just bake them. Absolutely delicious!

Your breakfast cups come out very dry. Need a sauce, maybe queso blanco or a hollandaise or even a béarnaise. Last resort, pour on some melted butter.

I make french toast with a tablespoon of orange liqueur and orange zest. Raised up a notch.
I agree, definitely takes it up a level. I've made French toast with orange essence and the flavor is so fresh.
