The Owner of The Madhuram is so sweet , when I was studying in a coaching class like 7 years ago, We were short by 40 rupees and he gave us the food anyway. Once in a while you should come out of city and enjoy some adventures in villages of India. In this monsoon season you should visit to the western ghat. Maharashtra, Karnataka etc, explore some hill stations, forts above western ghat Hill's, waterfalls. Those are exciting
The first date you tried is of a very cheap quality. They're usually dipped in sugar syrup to make it sweeter and also to increase in weight which is why it is so shiny. But it's cheaper so poor people can afford it. Just wash it under clean water and enjoy it.

Unlike Arabic Countries and Iranian Dates, Indian dates are not so popular, yet its quite nutritious and delicious in taste. Its cheaper in price and hence even poor people can easily afford.

That second kachori was made with potato and tapioca, as that lady said tapioca in Hindi is called "sabudana". So maybe that earthy flavour was from tapioca

You should have tried Maharaja kachori corner and Mittal Kachori at Jail Road, also Bam Kachori at Kanch Mandir. The kachoris at these outlets are much better than at Ravi Alpahar.
