I never understood why the Academy on Dantooine was left abandoned and never reoccupied after Kotor 2. It would have been relatively easy to re-establish the enclave rather than build a new one from scratch somewhere else.
I think rebuilding straight after KOTOR 2 would have been difficult since the locals had strong anti jedi sentiments cause of the bombing and the Jedi being jedi before that. By the time the locals became more amenable to it, the enclave may have fallen into worse disrepair and mostly anything of value was taken.
You forgot to mention that old man had controlled millions of cloned soldiers who were manipulated into killing the order because they had chips in their heads that can be activated when that old man says execute order 66
Honestly, the ancient Jedi order before Exar Kun was so much better..... Much more difficult to take out many small cells than it is to take out a single target.
I like the idea of Jedi Watchmen. Needing to go off on one's own to seek out Masters teaching specific skills would be a good way to keep Jedi connected to the larger galaxy, rather than closing themselves off in one location. Staying in one location creates attachment, stagnation, and a vulnerability to the influence of local government. Not to mention how convenient it is for someone to kill most of your order when so many are under one roof.

I feel like a lot of their roles and jobs and appearances overlap, and I'm having trouble finding definitive answers online. For example, a ton of different troop types operated AT-RTs over the course of the show and episode 3.
The Jedi Temples on Jedha, Lothal and Ahch-To...when were those constructed? As an aside, Disney Canon states that the first Jedi Temple was on Ahch-To. I interpret this to be the first temple constructed by the newer order of the Jedi and not the far older precursor Je'daii Order, who constructed nine temples, as I recall, on Tython with each one related to one of the Tho Yor that transported the Force sensitives to Thython circa 36,000 BBY.
Well technically "the first jedi temple" in Legends was not Tython because it was home of the Je'daii. It wasn't Ossus because technically that was a Jedi Library. Not a temple. As much as I hate Disney canon the "First Temple on Ahch-To doesn't change Legends canon because it was never pointed out in Legends.

I was sure that the jedi of the agricultural corps had their own outpost somewhere in the galaxy. There's even a comic showing Sidious and Vader coming to said outpost to turn the jedi there to the dark side.
Honestly I’m curious the most on the history of the great Jedi library on Ossus and the dark temple on Dromund Kaas. It’s hard to find a lot of lore on them. I know Ossus was destroyed by the sith but it seems like Ossus plays a bigger role than Ilum.

Lightsabers werent always a jedi weapon. A lightsaber is built by the padawan to match their personal fighting style and something about the force crystals. The disney movies lore doesnt count.

Ahch To is just Kathleen trying to scrub the lore again. Just like how they tried to retcon the existence of Korriban, they tried to retcon the existence of Tython too and replace it with Ahch To. Though that being said, based on the quality of the writing it could also be the case that Rian Johnson simply didn’t care enough about the series to ever even bother looking up if the Jedi home world was pre-established in the lore and just decided to make a new one up to say he was original
