I go to church that has a large samoan family. I was blown away with some of the recipes. One lady made soup with canned corn beef from the dollar store. It had macaroni in it along with tomatoes corn and onions. It was such a simple recipe and very inexpensive. The pot of soup huge too. I love church potlucks, I'm always learning a new recipe haha
Celery and carrots don't get enough credit sometimes. I've added both to chili. The celery adds a nice little crunch and the carrots provide another heartiness.
We grew up eating soft fried eggs on rice. So good and comforting. Ate a lot of dried beans and rice, but momma always cooked her beans with the "Holy Trinity", onion, celery and bell pepper. And of course, bacon grease from the coffee can on the stove!
I live in a hotel with a kitchenette. We don't have an oven just a double burner stove top,a microwave and fridge but we bought an electric skillet, a crock pot,air fryer . I use my crock pot along and we buy a lot of the packaged potatoes like instant mashed potatoes and the augraten potatoes which makes a great dinner in the crock pot with some kind of meat to them, so I am always searching for new recipes that are budget friendly and that can be made with the cooking items I have . Your recipes on these meals are great I just think outside the box and cook them differently. Thank you for sharing
If you have a microwave, crockpot, and air fryer, why not cook _actual_ potatoes (as well as other veggies)? If you compare the price per pound, I think you'll find a bag of potatoes (or even a few at a time) is considerably cheaper than any type of packaged...and much healthier. Potatoes, onions, and sometimes other veg are often available at food banks as well.
Your videos have really helped me think out side the box. Sunday I made home made chicken n’ dumplings, super easy, flour and heavy whipping cream till it sticks together, almost equal parts, (I didn’t have HWC so I added milk and melted about 3 tbsp butter and they were perfect. This is actually the biscuit dough recipe I use, they’re delicious) roll out and slice into pieces and drop in. Last night I had about 1/2 left over, so I put on the stove, added some canned veggies, green beans, carrots, corn. Then sliced and steamed 2 potatoes and 1 sweet potato, added to the chicken n’dumplings and made it a soup, served with corn bread. I feel so good about not wasting food.
I used to make a large batch of Pasta Fagioli and freeze in different size containers. For breakfast on a winter day I would top some of the soup with a poached or fried egg For lunch I would have it with bread, a roll or crackers For dinner I often topped a Baked Potato with Pasta Fagioli Creative, nutritious meals are needed in this time of financial confusion
For potato toppings: my mother-in-law sometimes serves leftover Chicken A La King on top, and my parents would throw a scoop of leftover or canned vegetable beef stew on top. Pretty much everything goes with potatoes, they are wonderful. Love your stuff, thank you!
Vegetable stew over a potato was one of my college dorm go-tos. We were only allowed a microwave. I've also done toppings of: salsa, cottage cheese and tomatoes, egg, a simple can of chili beans, even household seasoning staples like chives, or chili lime seasoning mixed in with my sour cream can add great flavor to a very simple and cheap meal.
We do meatless meals and two favorites use potatoes..one is a baked potato topped with butter, heated to boiling pork'n beans and topped with onion and cheese...so simple, but so tasty..the other is a baked sweet potato topped with bitter, heated black beans and topped with sour cream, cheese and onions...simple, cheap and tasty...and good for you too. A meat version which is delcious is a baked potato, topped with butter, pork BBQ, sour cream and cheese. I buy the Cades Cove pork BBQ b/c there are just 2 of us and it's more convenient....this combo is very tasty.
Maria! I loved it when you said ‘You can spruce it up’!!! I’m gonna start saying that and acting like I made it up myself… 🙇🏻♀️🙋🏻♀️🙆🏻♀️ Also, that bread looks so pretty that if I made it I swear I’d take a picture of it and put it in my wallet haha…
I always make tuna salad as a cheap meal that I serve on crostinis. The recipe I use may be a bit weird to some but it's delicious! 2 cans tuna, 1 tbsp dill, 1 clove garlic minced, 1 chopped shallot, 1/4 bell pepper diced, 1 pickle diced, 1 tbsp Dijon mustard, juice from 1 small lemon, 1/3 cup mayo, salt and pepper to taste
When I was in England, they had "jacket potatoes" on the menu with pork and beans, and tuna salad. That's where I discovered pork and beans on toast was good for dinner and so cheap!!
Thanks Maria! The way things are going, its really good to have these types of recipes in our repertoire. Praying we don't HAVE TO use these all the time, but grateful for ideas that we can fill bellies on such a low budget. Our church makes a sort of taco salad for lunch. They call it haystacks. Brown rice on the bottom, beans on the rice and salad on top. We are vegans and so we make a cashew cheese sauce and add all kinds of salad veggies on top. It needs green onions and cilantro. The tomatoes and olives make it delicious. It’s always a beautiful meal.
We love canned green beans on our baked potatoes! It sounds a bit weird, but it is so good. We discovered it by mistake but now I always serve it that way. Potato, butter, cheese, green beans, sour cream, salt and pepper. Plus, if you have access to a microwave it's a great meal to take while traveling. (Baked potatoes are better in the oven, but also tasty in the microwave.)
OMG! That bread was the most beautiful homemade bread that I have ever seen. I quickly reviewed all your videos to see if you documented the making of a sourdough bread and did not see one. Please, PLEASE make a video on how I too can make a loaf even close to that one. Signed; an old guy who loves to cook for his wife.

Love baked potatoes for using up left overs: bbq shredded chicken, bbq shredded pork, cheddar broccoli soup, scrambled eggs, so many options and so delicious.
For those who are just starting to make their own sourdough: Don't throw away the excess starter when you feed it. Use that to make the absolute best pancakes, muffins and biscuits you've ever had!
It makes GREAT pancakes! My husband won't eat any other kind anymore. Crackers, scones, muffins, biscuits and even sourdough discard bread are all great uses. You can compost it, freeze it, dehydrate it too!
For the tuna melt, since you already have the mayo out, use that on the bread instead of butter when you grill it. The crust you get is WAY better than what you get with butter, and it's easier to spread.
If times get tougher as predictions are saying I wish you would do a series on your sour dough I mean if you are making loaves that look like the one in this video you are a pro. There are many things our great great grandparents did with sour dough but it is rather a lost art in the every day kitchen anymore.
These are beautiful dishes! Beautiful food just tastes better. Cheap food doesn't mean boring and repetitive. Thanks for sharing these. I've made it all my life without tuna melts in my life, and my husband says he really likes them. I'll be trying these this week!

If you don’t have celery but you still want that celery taste get celery salt. It last for a super long time on the shelf in your pantry with your spices therefore you may not have the crunch of the celery but you could still have the taste and not worry about your salary going bad absolutely love this Maria you did amazing I love your videos
I don't know about over there but in aus we have this meal called bubble and squeak. It is basically anything left over from the last few days mixed with mash made into a patty and shallow fried. If you are feeling really fancy you can crumb them
When I was growing up my mom always cooked corn, diced h, and butter and put that over our baked potatoes. I still eat it to this day and add cheese on top and my kids love it too. It is very filling.

I hope you.have a wonderful week!😊
Hi Maria 😊 thnx for sharing...I also add a little lime, lemon juice and Italian seasoning and/or paprika and a bit of pickles or cream cheese... have a great day ❤️
Hi friend! I'm a newbie! I found you from your collabe with Tiffany at Small Town Six! Loved your video!! For my tuna I love adding diced cucumber, avocado, & red onion...sometimes I also add a splash of lemon or lime! It's super delicious & refreshing. I also like to add cilantro. I know that some people think it tastes like soap, but I love it! Can't wait to see what you come up with next!! Super happy I found you!
Great well done girlfriend! Tip! When shopping for bread please try to go for Whole wheat bread instead of white bread because whole wheat is a little healthier then white! White flour alot of it that is mass produced is used is actually bleached white flour. They enriched the flour and strip it of it's nutrients striping out everything that was good in it. We need to be aware of what we put in our bodies! Great recipe tuna melt! I have never made a hot tuna sandwich before. I am more into cold Sandwiches in the summer! However it kind of fun to make. I would like to try it see how it turns out!
Three favorite ingredients of mine you used in this video: potato, egg, chili. Loved the way you used them and reminded viewers food can be simple. Two additional meals I have made with these three ingredients are an Idaho Sunrise Potato and, one of my absolute favorites, a chili omelet.
For tuna, I skip the Dijon mustard and use lemon juice. Also add it to chicken salad. Gas just hit $7 a gallon in parts of California. diesel over $8. Primarily because state law requires all these summer blends, so do lower jurisdictions. Still, it will have an effect on food prices. This is a situation where things likely will move higher and faster. Washington State and Pennsylvania are two others that will start going up. Beans and rice are out for me as a diabetic (small portions of beans, fine). Fasting is still my option. A study recently came out of Japan on the benefits of pickled items, vinegar and lemon juice (citric acids) on keeping your glucose controlled. So, not only for diabetics, for weight loss, those are items that are relatively cheap, yet can help control your glucose spikes and assist with weight loss. Bean salad, pickled asparagus, sugar free sweet pickles as a small portion is helpful. I try to have one of those with my meals. I'm allergic to dill so that bit of sweet is enough. It's seriously time to stock up your spice cabinets. You can do so much more with some simple spices. I'm ordering in lemon and lime powders because it's highly likely where I'm at, I won't be able to get fresh. I have liquid juices, but for meals the powders are something I can add to black beans and other things to bring up the flavors.
@@tesyward9544 I have no idea why my posts aren't showing up, this is the second time. I buy mine from My Spice Sage online. Tomato powders I buy from emergency storage companies. Cheese powders, sour cream and bouillons from emergency suppliers. If you do buy tomato powders, make sure they are sealed well in jar, not a bag as they take moisture out of the air and harden fast.
Add to baked potato ranch dressing with butter some cheese sour cream, with Green onion, on top. Also when adding the butter as topping make a garlic butter by sprinkling garlic powder to the butter however only buy a quality seasoning such as Club House Garlic Plus!
Yes!! Another great video I love to do my potatoes in the Instant pot they turn out so light and moist. Salsa and or ranch is also good on potatoes. (Cook a few extra for homefries or potato salad) I am going to try the tuna melt. I quite like onions in my tuna. Your bread is BEAUTIFUL! Have you ever used mayonnaise on the outside of your bread to make a grilled cheese or melt? One of my work friends taught me that and it's awesome. Also I know that you make your own mayo, so.... My grown kids love it when we make it homemade. Your boys are so cute!! The beans and rice with eggs is a good combination. I like my beans a bit mashed with some liquid. Hot sauce on top of it all!! Have a great day Keep up the good work
Celery goes bad in my fridge....but I love the taste of celery...so I started buying celery seeds in the spice section. A bottle will normally last me close to a year. A little bit goes a long way.
Hi Maria....I have just come across your channel totally by accident and love it already. Re your tuna melt sandwich.....you mention if you don't have butter or oil for the outside ......do you know that you can spread mayo thinly on the outside of the sandwich instead and grill it in a pan just the same? My family of myself and my husband enjoy the flavour of this just as much as ones made with butter or oil.
Have you ever made mock tuna salad instead? Drain and rinse a can of chick peas, mash them. Add mayo, onion and celery. Use like tuna salad! It's really good on top of chopped raw yellow squash/summer squash and zucchini (no bread). Enjoy!
my two favorit cheap cheats are cabbage noodles, where all the flavor comes frome the browing of the cabbage and a little salt and using onions as a vegetable, they are very cheap and very flavorful if you only figured out how to prepare them
I hope more and more come around to fixing their own food. It's not hard, kinda fun, and so much less expensive than eating out or buying processed food.
Awesome recipes !!! Using a small amt. of mayo to spread on the out side of the bread instead of butter....will crisp up just like the butter does & really taste good....Enjoy !!!

Try horseradish in your tuna melt. Oh my goodness it’s amazing!!!
Your sourdough bread is just gorgeous! I make my own as well, but still learning. I'd love mine to look that good.
I just watch videos on RUclips and follow the scoring pattern 😀
Hame cubed on a baked potato is delicious with cheese, sour cream and little bacon with a little ranch
Three favorite ingredients of mine you used in this video: potato, egg, chili. Loved the way you used them and reminded viewers food can be simple. Two additional meals I have made with these three ingredients are an Idaho Sunrise Potato and, one of my absolute favorites, a chili omelet.
Yum! Chili omelette 😍
If you don't have butter for your toasted sandwiches, you can use mayo. It tastes really good and doesn't taste like mayo at all.
True!!
Bean salad is delicious and cheap! Great option!
Great idea, please let us know which lemon & lime powders you like best.
Just found your channel. Love your recipes!!! Thank you.
Add to baked potato ranch dressing with butter some cheese sour cream, with Green onion, on top. Also when adding the butter as topping make a garlic butter by sprinkling garlic powder to the butter however only buy a quality seasoning such as Club House Garlic Plus!
You are very good at this. Impressive!
Aw thanks!
in the UK, we eat tuna Mayo baked potatoes and its one of my faves or cheese and baked beans is another popular filling!
Interesting! I guess it’s like a Tina melt!
We lived in England years back. a popular baked potatoes topper was coleslaw. Very good and calorie friendly.
Oh Maria, you gotta rinse your rice. Beans and rice though? Top tier cheap dinner! Splurge on a little sausage and MMmmmmmm.
Yes!! Another great video
I love to do my potatoes in the Instant pot they turn out so light and moist.
Salsa and or ranch is also good on potatoes.
(Cook a few extra for homefries or potato salad)
I am going to try the tuna melt.
Have a great day
Keep up the good work
I should have added hot sauce to the beans and egg that would have been 👌👌 I need to try the Mayo like that! Keep forgetting 🤦♀️🤦♀️
superb....... looks very delicious and 😋yummy thankx for sharing such an amazing content looks delicious stay connected🎉
😀😀
Try Colcannon and fried eggs for supper. So good!
Awesome! I’ll try it!
These ideas look delicious!
I've watched a few of your videos before. Decided to subscribe this time. 🙂
I will have the rice, beans & egg bowl...🐥
👌👌
Celery goes bad in my fridge....but I love the taste of celery...so I started buying celery seeds in the spice section. A bottle will normally last me close to a year. A little bit goes a long way.
That’s a great tip! Thank you!
You can freeze celery. Personally though, I normally only buy celery if I know I'm making chicken noodle soup.
I absolutely love you and your videos..you are so creative ❤️
Aw yay! Thank you!
Beans/Lentils, Rice, Potatoes, Eggs. The holy quartet of cheap cooking.
Good point! I’m so glad you found me 😀😀 always feel free to share ideas! The comments are very helpful around here!
Have you ever made mock tuna salad instead? Drain and rinse a can of chick peas, mash them. Add mayo, onion and celery. Use like tuna salad! It's really good on top of chopped raw yellow squash/summer squash and zucchini (no bread). Enjoy!
I have and it’s delicious!
Thanks, Maria!! Really good ideas!
😀😀
I haven’t made tuna melts in ages! Thanks for bringing back these good ole meal ideas!
my two favorit cheap cheats are cabbage noodles, where all the flavor comes frome the browing of the cabbage and a little salt and using onions as a vegetable, they are very cheap and very flavorful if you only figured out how to prepare them
“Shopping the freezer”: we call this Freezer Diving” 🤣
This is one of my favorite videos you have done ! Thanks so much 😊
Aw thank you! So glad you like it!
I like to add a twist and make breakfast baked potatoes with bacon, cheese and over medium egg and sometimes add gravy!
Woah what a cool idea!
Was definitely surprised to see tuna on a $1 video as it is about $1.50 here. Crazy seeing the price differences by location.
Thank you for the video! Try rubbing those potatoes with sesame oil and salt, for a different taste. OMG, so toasty, toasty good!
I love the sesame oil idea!!! Thank you for sharing!
I hope more and more come around to fixing their own food. It's not hard, kinda fun, and so much less expensive than eating out or buying processed food.
Excellent video, with many options for those to try it differently
😀😀 thanks Betsy!
Awesome meals, Maria! Thank you! 🌺
You’re welcome!
I love baked potatoes with just about anything: cottage cheese, bbq sauce, taco or sloppy joe meat, chicken & alfredo sauce...
Mayo will toast bread as well. Thin spread of mayo in case you're out of butter and or oil.
Great ideas and your kids are stinking cute 💖
🤗
Awesome recipes !!! Using a small amt. of mayo to spread on the out side of the bread instead of butter....will crisp up just like the butter does & really taste good....Enjoy !!!
Awesome with grilled cheese. The tang adds the perfect touch.
