Few years back I have been trying to nail it down at home, closest I got was through having high hydration dough and cooking in an oven as high as possible. As an extra I got a large pan ripping high I place the pizza after cooking to replicate that stone baked glass shard crunch bottom crust while still having the stretch and satisfying bite to it. For taste it's all in the fermentation.
@@punani_slayer4209 The double zero flour makes a night and day difference. The counter vs fridge rising didnt really make too much of a difference I think since I left all the dough in the fridge for a couple days after rising.

Technically pizza is flat bread with cheese meat and sauce. Stuffing the bottom dough with cheese then putting dough on top would still be considered pizza since it’s stuffing the dough not covering the top

I grew up on metro pizza. I worked at Good Pie and Evel Pie downtown for a while and both of those places are solid. Especially good Pie. Yukon sourdough is also one to check out.
