EGG CURRY
Preparation time: 15 minutes
Cooking time: 30 minutes
Serves: 4
Ingredients
2 tbsp Oil
1 tbsp Ghee
1 black cardamom
1 Cinnamon stick
1 bay leave
1 cloves
1 tsp Cumin seeds
4 Onion, chopped
1 tsp Ginger garlic paste
½ tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
¼ tsp kasuri methi , crushed
4 tomato, chopped
1 no egg yolk, boiled
Salt to taste
4 nos eggs, boiled
1 tsp oil
½ tsp red chilli powder
½ tsp turmeric powder
For omelet:-
4 no Egg
Salt to taste
¼ tsp red chilli powder
¼ tsp turmeric powder
½ tsp Oil
1 tbsp coriander, chopped
For garnish
2-3 coriander spring
Process:-
● In a kadai heat oil, ghee. Add black cardamom, cinnamon stick, bay leave, cloves and cumin
seeds saute well.
● Add onion and saute till it become translucent. Add ginger garlic paste, turmeric powder,
red chilli powder, coriander powder and saute well add kasuri methi, tomato and saute well
till the masala gets cooked.
● Add ¼ cup water and let it cooked, add 1 egg yolk boiled so the gravy gets thicken. Add salt
to taste and let it cook.
● In a pan, Add oil, boiled and pricked egg , red chilli powder, turmeric powder and saute till
colour appear an keep it aside.
● For omelet, In a mixing bowl add eggs, turmeric powder, red chilli powder and salt to taste
and mix them well.
● In another pan add oil pour the egg mixture and cook the omelette soft in texture.
● Garnish with coriander
● Serve the gravy in two form, one with boiled egg cut into half and serve hot and one with omelette cut into half.

I like ur recepie bcoz you used common ingredients which we used at home..and with dat u made simple recepie so delicious...

Our version at home is after the gravy is nearly done, we directly break the eggs into the gravy. The eggs sort of poach in the gravy 😊

Yes . But we don’t keep the egg white intact. Love that texture! Also we use a lightly different gravy - mostly coconut and onion based . And use country eggs. Not English eggs.

Being a mallu, I was so excited by that mention of mutta maala by a celebrity chef in his show.. Mutta maala is a star dish in North Kerala dining table.. My mom makes that omlette curry since we were a kid. Never knew that is not normalized version in many places 😛
She also makes egg drop curry, where you prepare the gravy first and then directly crack an egg on it and let it cover and cook on low for few minutes until the egg is properly poached and hardened.
Porched egg curry is mostly made in maharastra n Konkan. We don't boiled the eggs. We just cooked with coconut curry.

The only recipe so far I couldn’t replicate was dhokla. Maybe 1) i added baking soda and that is not the same as fruit salt?, 2) too much water, 3) i kept a lid on the pan, because of which it didn’t rise and was very soggy. Kya kare, Ranveer aapne bataya nahi :)

We Bengalis call it 'Dimer jhol' for the bolied egg version and 'omlette er jhol' for the omlette version and I too love the omlette version. And I don't thicken the curry aka jhol. I just keep it thin and just go drooling. Hope you visit the homes of the general middle class people then you can have the authentic Bengali food . The regular food we eat. Thank you.
