I think it's way too much sugar. Sugar should only be to balance out the saltiness. I imagine that the sugar in such quantities will dominate the whole dish.
I tried using baking soda once to tenderize my meat. Biggest cooking mistake of my life. The consistency and flavor of the meat was atrocious. Totally dumped in the garbage.
