pap is the canvas food of braai! much like rice or couscous, its what you make of it. A nice spicy relish (chakalaka) makes it absolutely killer 👏if you ever visit again make sure to have a local friend to show you around, trust me it'll make all the difference.
I love seeing foreigners experiencing our food. The thing about the porridge “pap” is that it is actually in my opinion one of the things that we in Africa have in common. Pap and meat…every area in Africa south of the Kongo have a version of it. But the lady is correct, it should have a sauce usually made with tomatoes and onions. Next time ask them where is the “sous”. Pronounces like the word “so” just with an s at the end. It makes a huge difference.
a chunky sous is crucial to a stiffer pap. i recommend trying to make some "slaap pap" for dessert, a more watery version with sugar and milk added, some ppl even add a bit of cinnamon too
You need the shisa nyama experience or an invite to someone's place to better experience a braai. So if you can't crack an invite to someone's house (Joburgers are super friendly and will host just for you, so don't be shy) go to a shisa nyama like: Busy Corner
