Pumpkin Pie

  • Homemade Pumpkin 🎃🥧
    Crust: 2 Cups Flour
    2 1/2 tsp of granulated sugar
    1 tsp salt
    1 stick of very cold butter
    1/3 C shortening
    8-9 tablespoons of ice water
    1/2 teaspoon of cinnamon
    Add the flour, sugar, salt, cinnamon, shortening and small cut pieces of butter. You can use food compressor or a pastry cutter or a fork. Whatever you have in your kitchen to mix it up. Add 1 tablespoon at a time to your mixture until you’re able to mix into a ball of dough. Now, place the dough ball on Saran Wrap or place in a sandwich bag and place it in the refrigerator for 30-40 minutes. You want your dough very cold before you roll it out. Now lets make the filling.
    Filling:
    15 oz can of pumpkin pure
    1 tsp vanilla extract
    1/4 tsp nutmeg
    1 tsp cinnamon
    1/2 tsp salt
    1/4 tsp pumpkin spice extract or ground pumpkin spice
    1/4 tsp ground cloves
    12 oz can of evaporated milk
    1 can of sweet and condensed milk
    2 eggs
    Place all of this into a large mixing bowl. Then use a whisk or large wooden spoon to mix it all together until it’s nice and smooth. Once it’s mixed set aside. Now preheat oven to 450 degrees Fahrenheit. Now get your dough out from fridge and splash some flour on to the counter top and start to roll out the dough. It’s ok if the dough isn’t perfect. Once you have it rolled out use your rolling pin and start at one edge of the dough and pull/roll the dough over the rolling pin to pull off the the counter. Once you have the dough rolled onto the rolling pin, place it in the pie pan ( 9” x 9”) You can adjust the dough so it fits the pie pan perfectly. Cut the edges and make your crust. Now add the filling to the pie. Place in the oven at 450 degrees for 15 minutes. Then lower your oven to 350 degrees for another 45-55 minutes to cook. Once the pie is done, take out and let cool on the counter for 1-2 hours. I like to place mine in the refrigerator for another 2 hours to let get cold before I serve. Serve with whip cream and enjoy!     This pie turned out fabulous. It has a great texture and taste and not over the top sweet like other recipes and this crust...was perfect.
