    Actually I should have added warm water to the yeast with a little bit of sugar to wake it up and let it grow a little bit before adding to the rest of the tough. That's why the dough was so hard in the end because I did not give it time to rise. Nevertheless it tasted delicious :P

    A little advise with you oven. make a big fire all the way into your oven and then let it burn down and stoke the fire under. when the soot is burned off and it is the natural color it is ready for the food then you put a little cover over from door and it will work just like a modern oven! You should do a search on cob ovens and 18th century cooking. lots of real great information and man it takes bushcraft cooking to a whole new level as that was every day life cooking back in the day.

    Yeast goes into warm water a few minutes after it gets bubbly ,foamy then add to your flour , doing it your way the dough can't rise,

    • @Seezor
      @Seezor 7 лет назад

      Jeff Hansen your correct but not totally. Putting the yeast in water (warm water) to see if it bubbles is only a proof that your yeast is active or alive. It can still help the dough to rise putting it into the floor but the salt can kill the yeast that way. Water between 95-110 is good for the five minute yeast test. Once you know the yeast is active, mix your ingredients, cover and let it rise. Form into your pizza shape, top, then into the oven.

    Hi Lilly! Christine from Boston here. I have a recipe for Dutch oven camp bread that I think would work well as a pizza dough too. I brush the bread dough with ghee (which is shelf stable and so great for camping situations where refrigeration isn't an option). I infuse or just mix in herbs from my window garden to flavor it. Recipe below:
    3+ C. all purpose flour1 packet instant yeast1 Tbl sugar1 1/4 tsp kosher salt 1 3/4 C. water warm/hot out of the tap (temp around 105° F.)Any herb infused ghee you'd like to add (I like lemon thyme, but Rosemary would be great too).
    Mix dry ingredients and then add water incrementally. Mix w a spoon. Add more flour to achieve desired consistency.
    Knead on floured surface
    Oil Dutch oven, dust bottom with flour and place dough inside. Cover with moist tea towel. Place Dutch oven in warm area for a few hours to let dough rise.
    Brush lemon-thyme/ghee mix to oil with a little extra kosher salt to the top of the dough if desired or try mixing it into the dough itself, adding it too the dough mixture makes it more of a pizza dough.
    Cook for 30-40 min. at 375-400° F in preheated oven
    If cooking over coals, cover Dutch oven with lid and add coals to top

    Hey Lily, for a real bread treat, fold your pizza in half before cooking...steam inside pocket makes the dough a pleasant treat with all those goodies you put on top. Cut a few slices for release of steam and enjoy. Your additions mentioned in another video have made my breads so much more yummy...need something still to really add flavor, I am on salt restricted diet and nothing, absolutely nothing tastes better than salt on fresh bread. Oh, have you ever added dill? Make a pocket with cream cheese, onion and dill and a few chopped walnuts....meet you in heaven. Thanks again for all your great ideas. Become such a bushcrafter because of you and Stefan.

  • @naeznal
    @naeznal 7 лет назад +1

    It looks like you need to knead the dough longer and properly. Your dough is almost falling apart. When you properly knead the dough you actually fold it over and over again. Squeezing or massaging it doesn't work so well. You should do that for at least 5 minutes. After that the yeast needs some time to grow. The temperature is not so important. The yeast can even grow in the fridge, it just takes longer (some people say it tastes better to give it more time and let it grow more slowly). At room temperature at least 30 minutes are required.

    Good recipe. Good job.
    I have suggestions for some camp tools.
    One, you use pieces of firewood to baton your knife. That clearly works. You might try making a maul, like the kind that sculptors use.
    When you've batoned the sides of the firewood, you'll notice that you frequently make a cylinder.
    Whittle one end into a handle, leaving the other end as a bulge. Perfect for accurate, efficient batonning in the future. Tuck it in a corner of your shelter to use over an over.
    Two, make a cutting board by smoothing or planing the flat (but rough) face of a piece of firewood which has been split in half, lengthwise, providing two faces. Pick one. With some practice you can use your knife very well to smooth and flatten your cutting board, or you can use a sharp axe or hatchet. It will be a stable flat surface if you nestle it between two other pieces of firewood.
    I recommend storing the tools at your camp, rather than carrying them around. They are easily reproduced at other camps.

    Just fyi (although im sure youve gotten replies about it already) but you need to proof the yeast. It looks cold so it probably didnt even activate at all. You need to add it to warm water at first, let it foam, then add it to your flour. Add a pinch of sugar so the yeast has something to eat. You basically made a cracker.
    Also maybe try making one of those earthen mound ovens? They seem to bake things better AND they seem suited to survivalists.

    Hi Lilly. I enjoy your videos and find them very informative. Have you ever tried making Bannock? I usually bring the dry ingredients mixed in a Ziploc baggie and mix the water in when I'm ready to cook it. I like to make two flat, round pieces like two small pizzas then put a fried egg, bacon and shredded cheese on one piece then cover it with the other piece and pinch the edge around it to seal it then cook it in a frying pan greased with butter. Flip it over to cook both sides. Or better yet, try cooking it in that oven you cooked your pizza in. Now that is a breakfast that will stick to your ribs. It's one of my favorites when we're camping.

    HI Lilly, I f a may recommend you should use milk. Warm the mild to about 110 degrees F or 37.77 centigrade. The milk has about 13 gs of sugar. Add the yeast to the milk and let it sit for 15 minutes. Then add the yeast mike mixture to the flower. You will get a better rise out of it.
    You did a great job otherwise.

  • @borkthebasher
    @borkthebasher 7 лет назад

    add sugar and yeast to warm (not hot water) or the yeast doesn't activate. you need to knead it, ball it, and then let it prove and rise for a good bit first, knock it back then roll it into a pizza base. you will also get far more success if you place the pizza directly onto a smooth hot slab of stone. if you can find a piece of old granite tile, that's perfect for pizzas. it cooks incredibly fast and will burn before it cooks if its even slightly thick. you want about 5mm thickness no more than that. i would also suggest using a finer grade of flour. strong bread flour makes for a better dough.
    if you don't have a flat stone, a cast iron frying pan works just as well.
    i think a bushcraft chopping board would be a great and very useful addition to your camp. a circular cross section of a tree, planed smooth and oiled would make your pizza making and cooking in general far easier and hygenic without it loosing the bushcraft aspect of it's preparation.

    She used wheat flour which produces denser breads, allowing it to rise would have lightened the finished crust somewhat.

    I love how you was able to make that pizza in the woods and in your home made oven. It must have been very delicious too and you was able to eat all of it.

    Serwas Lilly. Der Anzug ist mal richtig geil. Beim Belag würd ich eher Salami nehmen. Nicht weil Ichs mag, okay das auch, sondern weil sie vom lagern her im Outdoorbereich besser ist bzw länger haltbar.
    Mach weiter so. Deine videos sind immer wieder ein Genuss.

    The most primitive bread is called flat bread. It is simply flour and water. No yeast, oil, or salt. It has a chewy, bread like texture. It is very fast to make.
    Simply make a dough, flatten it out, and place it on a very hot flat stone (or on a non stick frying pan at home). Let it cook for a minute and then flip it over and let it cook another minute and it is done. The toppings give it its flavor.
    To check the temperature of the stone (or frying pan if at home), drip some water on the stone, if it sizzles it is ready for cooking. The toppings (tomato sauce, cheese, onions, peppers, etc.) can be cooked in a cup and spread on the bread. This recipe requires no oven, just a flat rock.
    A half cup of flour will make two small pizzas. You can also put on toppings like meat, beans, and lettuce, then roll it up and eat it like a burrito. You can also use flat bread like a spoon to eat foods like hummus or even a stew.

    It looked good and I see you realized you needed to wake the yeast up. Just thought I would give you a different way of doing it.
    Take a sandwich sized ziplock bag and put in it 1-1/2 cups flour, 1/4 teaspoon of yeast, and 1/2 teaspoon of sugar. This can be stored for months so you can make it before you leave.
    Add just enough water to make a dough, mix it in the bag, and then zip the bag closed, working out as much air as you can. Put it in your jacket or backpack before you hike out. It needs warm temperatures to rise so putting it close to your body when it is cold will help. It will need an hour or two to rise and when it does it will puff the bag up.
    When you are ready to use it just open the bag, add a little flour to help it not stick to your hands, take it out and make your pizza crust or put it in a bread pan then cook to make fresh hot bread.
    You can wrap it around a stick and cook it over the fire, flatten it and put it on a board to use reflective heat from the fire, put it in your wonderful stone oven, etc.
    Keep up the videos they are wonderful!

    You don't need yeast for pizza dough. I never use it. Works just fine. If it's too hard, maybe you should add water.

    Next time, let the doe rise a bit, and blend the yeast with a bit of sugar to start the rising process. Also, par cook the doe before adding toppings, because it looked a bit raw on the top side.

    As an italian I would highly suggest not to put oil before it is already cooked. You should always put it at the end, otherwise it could be dangerous for cancer
