Best Lemon Chicken Soup- Greek Style

  • A delicious chicken soup , great for summer and winter. Very refreshing, creamy and satisfying.
    Chicken Lemon Soup - Greek Style
    -4 pieces of chicken thighs - boneless and skinless
    -5 large carrots
    -3 parsnips
    -1/2 celery root
    -1 onion
    -1 bell pepper
    -1 cup heavy cream
    -4 egg yolks
    -1/2 cup lemon juice
    -3 bay leaves
    -1 teaspoon black pepper
    -1/4 cup rice
    -1 tablespoon salt
    -1 bunch of fresh dill
    -1 bunch of parsley leaves
    -1/4 cup oil
    Cut the meat in bite sizes. Place it in the pot. Add salt and cover with water. Bring to boil.
    When starts to boil, foam will form on top, remove it.
    Take 4 carrots and cut in cubes. Do the same with parsnip, onion and red and yellow peppers. Place the entire celery root in pot. Add water.
    Chop the dill.
    Boil the meat until half cooked, about 15 min, then add vegetables.
    Add black pepper, bay leaves and dill.
    While the soup is cooking, shred the remaining 1 carrot. Place the oil and carrot in a frying pan and sauté for about 2 min. Add to the boiling soup.
    In a mixing bowl whisk together the heavy cream, eggs and lemon juice.
    Bring it next to the boiling soup and with one hand take some of the liquid from the soup and place in the bowl, while with the other hand you are whisking it. You have to temper the heavy cream and egg mixture, otherwise if you put it in the hot soup, it will curdle. So you have to gradually raise the temperature of heavy cream mixture. Keep adding soup and mixing it, then pour the entire mixture from the bowl into the soup pot. Mix well.
    Take off stove- garnish with parsley leaves.
