I've changed carrer but I once was a young chef eager to learn and prove myself and everyone (imo) that the over-appreciate Italian and French cuisines even though great, the Asian cuisine just takes cooking to a whole new level, specially Korean cuisine. The attention to detail and precision, dedication to their roots and overall respect for ingredients is just a beautiful demonstration of their culture and professionalism. Minimal waste and everything it's re/used to empower other ingridients. All of this hard-work culminated to a "simple" dish that customers will gladly enjoy and pay without even processing and/or knowing all the intricate processes behind all their dedication (with us here in YT as exceptions). Mad kudos to the entire personel.
