I made this today! I do have to mention some things: because the recipe calls for bittersweet chocolate, you will have that bitter chocolate taste even with all the added white and turbinado sugar. If you want something more sweet I would suggest milk chocolate and less sugar to balance it out. Also, this took a lot of time and effort for me to make so I would suggest to anyone who's not used to baking food to allot a good few hours knead the dough, roll out the dough to make a rectangle, and to apply the chocolate sauce. The chocolate sauce can get thick as it cools down so watch out for that. It'll be easier to spread while it's more liquidy. I would recommend putting the rolls in the fridge for at least 15 minutes before cutting it in half because it can get really soft and difficult to handle. Also, it's good to let the dough rise overnight, not just two hours.

Made this now because I have so much time. I lessened the amount of espresso powder though and it turned out delicious! It’s my first attempt in bread making and the kneading process was so tiring but so worth it

I wanted a straight up cinnamon flavor so instead of using that recipe for the filling, I used one I found online (I forgot where I found it, sorry) which was 2 tbs melted butter, a cup of brown sugar, 1/4 cup of flour, an egg white, 2 tsp cinnamon (I used 2 + 1/2 tsp), and a little salt just to enhance flavors :)
That's what I heard from my family friend Pete, The Chocolate Babka. He has heard that from a TV-show called Seinfeld. But he has also heard of the Cinnamon Babka before as well. Pete even brought the Chocolate Babka for my stepfather Jim because of him loving Seinfeld so much and couldn't remember of what Chocolate Babka is. Now I do!! :D

Well, I wouldn't call it a babka, it's more of a wieniec but it still looks pretty good and is at least remotely connected to its name so who am I to judge.
It looks more like the babka they sell in Jewish bakeries, although they're usually taller because they're generally cooked in loaf pans. I read somewhere that the addition of chocolate happened when Eastern European Jews came to the US and found chocolate cheap and plentiful.
Please anyone who is attempting to do this try thyme with olive oil or cherry dried tomatoes with olives YUMMMMY (I didn’t do this recipe but my mum recently did babka bread with these fillings and oh god I would get a room with them)

I made it and it was very brown after only 25 minutes... I then turned the oven down to 275 and cooked it for the rest and it came out perfect.
Our family makes this all thee time! The only difference in our Babka is that we use sweetened poppy-seeds instead of chocolate!
