I love your review , and your style you present in your videos for many reasons. #1 I have just bought a horl 2 ,and love it,#2 like you, I just have to have a real sharp knife in the kitchen at all times , every time.#3. I suck at sharpening knives,even though I’ve practiced a lot,and I’m coordinated at almost everything I do ,except darn knife sharpening!#4 .I love the English people, they have a certain class and civilized respect for people.Along with being stationed at the old Upper Heyford base in 1981,,and met some beautiful and wonderful people. And last but not least,,,you have a very casual and easy to listen to presentation.thanks mate,cheers

That's really interesting. Over the years, I have brought many as well. I took some of my favourite knives to Thailand when I moved here. I find I get on better with the Asian knives. I prefer the angle. Like you, having a sharp knife is an absolute must.
I've tried all sorts of ways to sharpen my knives and was even shown recently how to do it on a wet stone in Kappabashi Dori (the kitchen ware street) in Tokyo but it's finding that elusive 15deg angle that's so difficult. Get it even slightly too high and the bevel becomes rounded and you've lost the edge. The Horl2 gets round all of the inherent problems and enables you to easily achieve a 15deg bevel each side of the blade; moreover it's repeatable every time the knife is sharpened. Apart from the price, what's not to like? Horl2 Pro on order very shortly.

I’ve used Chef Choice Electric Sharpener 15XV to convert my Western 20 or 25 degrees to 15 degrees and use Horl to get sharp and keep sharp. The Japanese steel holds 15 degree better, but with Hurl, sharpening 15 degree western steel knives a bit more often was great.
It means more work, but a big difference. In saying that, I get the knives sharp with what came in the box mainly ( unless I have to use the rough diamond disk I got as extra, on new knives), then just hone them a few times with a honing knife until I use the two again. Perfect at that for everything in the kitchen and you can do it quickly.

I'm a woodworker so I like super sharp blades on my planes and chisels. It's a question really of working through up through the grits to achieve the edge you need. I finish my plane blades and chisels on an 8000g stone and then use a couple of swipes on the strop. If it's really sharp you don't need to cut paper (it's highly abrasive) and you should never, under any circumstances try and shave the hairs of your arm; that's simply asking for trouble which will probably entail a fair amount of red leakage.

I have also purchased the 2 additional whetstones since to get the chosen knives to their optimum. Now I could really shave with those 😁
I cringe every time you slide your fingers over the blade after sharpening. If it was actually sharp you could not do that, without the blade biting your fingers..
You are pushing too hard on the blade. Put minimal pressure against the blade and let the sharpener do the work. You will notice it will make an even sharper blade. And I know it doesn’t seem like much you could use the leather strip with some compound and further refine the edge. I’ve used some of the highest end sharpeners and my friend can still make a knife just as sharp in a quarter of the time as long as he does every step in the process
European knifes 20 degrees?! BULLSHIT! Real European knifes, like Zwilling and others use 15 degrees, Wüsthof uses 14 degrees. 20 degrees is for your pocket knife or a cleaver, not for kitchen knifes.
Holy smokes, when you tried to shave hair of your arms, I nearly shat myself. Had you handlede my knives like that against your arm, you would have been in the hospital. Seriuously - a proper sharpened knife would have taken your skin right of.
Perhaps the higer price in England comes from the fact that england has left the EU! So Horl has higher cost because of the toll and expanses that came from the brexit.
Nope, the Pound sterling is significantly higher premium to the Euro. No excuse for the parity in exchange. A good reason not to buy it in all honesty. And if Brexit is the reason, then it's a difinitive reason to bouycot the sharpener, plenty of others out there to choose from and I'm certainly swaying to the Canadian Hone model. No excuse

Wouldn't recommend it. Even if you can separate the blades and do them individually, I'm not sure if the angle is good for scissors

Great video, I’ve now got a Horl2 and generally impressed. A question, how much difference to the sharpness did the additional 3000 & 6000 disks make?

They weren't too bad from disasters to sharp after a few minutes work. More time spent on them later honed them to perfection, literally 👍🏻😁
