Lobster Cantonese Style With Crispy Noodles 粤式龙虾脆面 (Better Than Chinese Restaurant Recipe)

Impress your family and friends with this gourmet recipe for Ginger scallion Chinese style lobster. This lobster stir fry Cantonese Style has extra flavor when it's cooked in a wok with lots of wok hei. Twice the lobster and twice the noodles for half the price at a Chinese restaurant.
    In this video, we go to one of the most famous Chinese restaurants in Greater Vancouver. It's the Sun Siu Wah Restaurant in Richmond, B.C. Then try out my recipe for Cantonese Lobster With Noodles and see for yourself.

    Tip: When you buy lobster at an Asian Supermarket, ask the store worker to clean and cut up your lobster. It will save you a lot of time preparing this dish. I like to order my lobsters cut into large pieces. When I get home, I cut the lobster into bite size pieces. The sauce is infused with aromatics, such as ginger, green onions and onions.     LOBSTER CANTONESE STYLE With CRISPY NOODLES 粤式龙虾脆面
    2 lobsters (approx. 2 lb. each)
    6 to 8 or more tablespoons cornstarch
    2 to 3 cups peanut oil (or other cooking oil)
    6 to 10 tablespoons peanut oil (for stir frying)
    2 lbs. (908 grams) Farkay noodles (or other kinds of noodles)
    1 medium onion
    1/4 cup sliced ginger
    1 cup chopped green onions
    1 to 1 1/4 cups or more chicken broth or water
    1 teaspoon salt
    1 tablespoon sugar
    1 to 2 tablespoons mixed in 1/3 cup water
    3 to 5 tablespoons regular soy sauce
    3 to 5 tablespoons Chinese oyster sauce (optional)
    PREPPING AND CUTTING UP LOBSTER
    See if you can get the lobster cleaned and cut up at your local Asian supermarket. Other wise, clean and cut up the lobster by following the instructions at the start of my other video, under Lobster With Chow Mein Noodles.
    COOKING THE LOBSTER
    Put 6 to 8 or more tablespoons cornstarch in a plastic bag. Put lobster pieces inside and shake to coat the lobster pieces. Put 1 to 2 cups cooking oil in a pot or pan. The oil should be heated at medium to high heat. Stick a chopstick into the oil. If there are bubble forming around the chopstick, the oil is ready for deep frying the lobster pieces. For 2 lobsters, deep fry the lobster pieces in 2 to 3 batches. The lobster pieces only need 30 to 60 seconds to cook. Shake off the excess oil from the lobster pieces when they are finished cooking and set aside.
    COOKING THE E- FU NOODLES
    Put water in a big pot and bring to a boil. Put 1 bag (454 grams) noodles into the boiling water for 1 minute. Strain noodles in a strainer. Put noodles in a large pan or a large plate.
    To STIR FRY THE SAUCE:
    Preheat the wok or frying pan at medium to medium high heat. Add 3 to 5 tablespoons cooking oil. Add sliced ginger and onions and briefly stir fry. Add 2 to 3 cups chicken broth or water and bring to a boil. Add salt, light soy sauce and Chinese oyster sauce. Thicken sauce by adding slurry of cornstarch and water to thicken the sauce. Add slivered green onions to the sauce just before serving. Add the lobster pieces into the sauce, so the juices and flavor of the lobster can be absorbed into the sauce. Make sure the lobster pieces are well coated with the sauce. Pour the lobsters and sauce over the noodles. Enjoy!

      I should post a video where the lobster is not deep fried first. The lobster goes in raw into the wok. In the old days that's how they cooked the lobster but modern Chinese restaurants deep fry the lobster pieces first.

    How long do you cook lobster?

      The lobster is already cooked after you deep the lobster pieces. Under 5 minutes to coat the lobster with the sauce.
      If you do not deep fry the lobster pieces, cooking the lobster takes longer. I would say at least 15 to 20 minutes or longer. Thanks for checking out my video,
