Field trip to Gothenborg’s free range and organic poultry farm with Relæ Community
The chefs and bakers from Christian F. Puglisi's Relæ Community (Relæ, Manfreds, BÆST and Mirabelle Restaurant and Bakery) took a trip to Gothenborg Poultry Farm to visit Lone and Lars Hedegaard and their fantastic free range and organic poultry and Denmark's first certified organic chicken and ducks
Lone and Lars breed their chicken, ducks, geese and turkeys in a very sustainable, different and special way. The poultry live longer than what you are used to see in conventional breeding and ordinary organic methods and they have free access to HUGE pastures where they roam and graze for herbs, bug and grass - that’s something you can taste!
You can taste Gothenborg's ducks at Relæ and BÆST and the chickens at BÆST in the chicken liver parfait and as the chicken wings or at Mirabelle in the pastas and the chicken salad.
