This looked amazing, I am allergic to rice and have been working on finding dosa recipes to make crispy dosa. Will have to give this recipe a try. What was the purpose of adding lemon juice to soaked grains ??
The grains protect themselves from worms and other organisms such that the nutritional value remains intact. That is why we can store grains for a long time, and you may have noticed that after a very very long time of storage, the grains get worms growing through some medium. The acid which grains have to protect themselves are phytic acid , it's basically like a poison ,not conducive for us, but useful for the grains and legumes.
When one cooks any grains, beans and lentils or legumes a foamy substance comes up on the surface that's actually phytic acid. So, using lemon on top helps release the phytic acid easily from the grains, and that allows them to open up their nutritional value. With this acid release , you will notice the grains' beans and legumes when consumed are not heavy on the digestion , feels lighter, and also gives the best benefit of their existence.

Different standards hote hai ekadashi follow karne ke. Koi sirf water pe rehta hai , 2nd level pe fasting sirf fruits pe karte hai aur the last one usme cabbage aur dusri sabjiya khsste hai. Srila Prabhupada ne kaha hai one should avoid grains , beans , lentils pulses and cereals.
Cabbage taboo nai hai ekadashi par kyuki woh grains nai hai.
Mam , pyaz cooking me use hota hay.May bhi iski taste chor nehi pa raha hu.kia ye galat hay
Prasadam khaao apne aap pyaz ke taste se ghrina hone lagegi

Quinoa is a whole grain not suitable for vrat, but this recipe is healthy so this can be used on a daily basis
I'm a beginner and I'm facing headaches, weakness and gastric for fasting with fruits only. Leaving grains is difficult if we are not used to it. Our body has become so used to three times consumption of grains. 😰

That is why there are different standards and Srila Prabhupada is very merciful he has given the people of kaliyuga whose bodies cannot do much austerities concessions on ekadashi. You may take quinoa, potatoes, squash and other things which are acceptable on ekadashi
