Man best of luck on that ceiling - ran a successful woodworking business and ran into some " can of worms " jobs and learned what to pass on and what I could do that allowed for a profit.
My Journey also has the vinyl ceiling issue. The deal is that the foam breaks down and no amount of re-gluing will get it to stick again, ask me how I know!!! I had Winnebago quote replacement of one, and only one section of vinyl ceiling and their over the phone quote was $2000. I considered using FRP, (the dear wife didn't like that idea) attached with mechanical fasteners because the only way to glue anything is to scrape all the old foam and glue off of the Luan Board, a very labor intensive task. If you ever come up with a better mouse trap let me know. I have been staying off further de-lamimarion with a staple gun. Not beautiful but not horrible either. I ended up purchasing an additional aluminum strip and plastic cover to support the vinyl at a 2' center vs the original 4' center. I need to go back and see what dear Cousin Gary did to an Airstream. Will be driving through Beautiful Cleveland TN next week on the way to Florida, I will wave as I drive by.

I've frp'd 2 winnabago's, i used spraylok glue and those plastic rivets, pulled all the cabinets and it actually looks good
We got almost 7 inches here in Mobile AL. I was born in Church Hill TN., and we got lots of snow almost every year.
I have put frp/dairy barn board into 2 winnebago ceilings, not a fun job, but it gets rid of the sagging headliner
