freezing the white and then using them straight into the shaker is a game changer, both to minimize prep and also to come in handy when you don't have tons of space for tons of ice cubes.

I’ve been waiting about this! I have a giant egg white block (2-4 cups I think) and idk what to do with it. I can’t portion it out to use it so it’s just sitting there. This was from the dark ages before I discovered ice cube trays.

Have you tried using what's left of the egg white in the shell on your face? It's great---let it dry, then rinse it off. You'll look and feel years younger! I was told this many years ago by a Romanian princess (not kidding) who was a ramp model for Nina Ricci.
To understand the protein denaturing process better, it’s worth to emphasize that exposure to air, is the real reason why the protein is unfolded, as the protein is amphipathic (having both hydrophilic and hydrophobic parts). The function of mechanical force (beating) is just to incorporate air into the protein solution. The mechanical force itself has no direct effect on the protein to unfold. So, to let your cat stretch out, just give the pet a basketball (air bubble). No “agitation” is required. Another example to understand this. A lot of guys there would enjoy the thicker texture of milk (another protein solution, though more dilute than egg white), in a cup of latte at the coffee shop. How does a coffee shop prepare milk to make the cup? Pump hot water steam into the milk with an espresso machine! Both high temperature and air of the water steam, contribute to the protein denaturing process. If you don’t have the luxury, you can have a cheaper substitute at home, with an Italian moka pot, and a mechanical battery driven milk frother from the certain well-known Swedish furniture chain. Though very enjoyable, the substitute is still a little bit different, I think. The essence is high temperature and air, for the milk part of a cup of latte. That’s the same for the denaturing process of egg white proteins.
Do not try this with a cat.
@@nancylindsay4255 Indeed. To me, giving a basketball to a cat, is fine, and fun sometimes. Forcing a cat to stretch out by agitation is just too much over the top.

Thank you, Dan. I have a bag of egg whites in my freezer from using the yolks for ice cream and I don’t know what to do with all of them.
I've been wanting to try making a Pavlova for awhile, just looking for what mix to fill/top with. As a Dog person I want to see cooking with Dogs!, absolutely! (in my house it's ALL cooking with Dogs as there will likely be fur in anything made)
Berry fruits, kiwifruit, passion fruit pulp, pineapple, peaches, apricots, various compotes (sweetened rhubarb, etc.), tangerines, mandarins, oranges, pink grapefruit, pawpaw, papaya, mango, dragon fruit... the list is endless. Basically your choice of fruit salad and complementary garnish on whipped cream.
Now given the cat on the kitchen table, licking at the food whilst Dan is eating it? (OMG are you serious?!? blech!)
What about something savoury? Hmmmmm... 🤪
