  • I'm gonna show you how to make a Philly Cheesesteak at home today. Making a real cheesesteak at home is something I've always viewed as out of reach until I was asked to make one recently. So I studied some of the legends, Pat's, Dalessandro's, Gino's and worked on a method to make a real Philly cheesesteak at home for all to enjoy, where ever you are!

    I'm about to be 29 and have been in a rut lately with the industry and haven't enjoyed cooking at home because of it. Its 1:28AM where I am and watching several of your videos in a row especially your 368 videos have seriously helped to shake up my mindset tonight.     I've been eating cheesesteaks from all the Philadelphia spots for years. Thank you for not making another lazy attempt at a Philly Cheese Steak. This is pretty spot on, sir!

    Holy Cow, I just made this Cheesesteak on the Weber Kettle using the SNS- OUTSTANDING! I used a bone-in Cowboy Steak(1.15 lbs, removed bone) and used Ghee as the Beef Tallow was $15.00 for a kind of a smaller jar. It was a lot of liquid! I didn’t trim any fat, It was almost like frying the beef and onions, but by the end, the liquid reduced and part of the beef was really crunchy, and the provolone, oh yeah! but the onions didn’t burn like it would with regular butter-they were perfect. I added some garlic powder and freshly cracked black pepper. My son and I were eating these cheesesteaks and watching the 2nd day of the NFL Draft, it was heavenly, haha 😁 My teenage Son said, Dad, the heck with wings, this is the sh*t!.       Great recipe! Thanks very much for the video.
      In the question of which fat to choose as beef tallow might be difficult to get I would propose goose fat! It's absolutely clear and you can heat it up well and gives a great meaty taste (e.g. it's great for fried potatoes with onions and bacon).
      So where to get goose fat from? We usually have goose for Christmas and a roast goose gives you plenty of golden fat which I keep in the fridge in glasses.

      Actual cheesesteaks use salt pepper and garlic powder near the end of the cook so you don't draw out the juices with salt. The roll is key tho. You need like a cross Italain/French roll to really get it right.

    I'm from Philly. Yes it's true, we eat these things for breakfast lunch and dinner. It's incredible how many people get this so wrong but I gotta say I think you nailed it. Thanks for actually making a Philly Cheesesteak and not a steak sandwich with cheese.

      His looks really good, but what it's missing is the bread. That's what EVERYONE is missing. It's the rolls that some company in Philly drops off in these huge plastic bags in front of delis all over Philly. The rolls are double-length and you have to cut them in half length-wise to make a sandwich, so every sandwich has a round end and a flat end. The rolls have corn meal on the bottom. THESE are THE rolls and they make all the difference in the world, I think.
      Otherwise his steak and cheese sandwich looks close to a cheese steak, but it's still lacking. Someone needs to figure out those rolls first.

    The roll is a key ingredient. You must have a freshly baked Italian long roll, it’s very noticeable when you do.

    2 years late but I just watched your presentation - it’s GREAT! You are an excellent teacher and presenter! Just great! I am learning new tweak’s and you’re never too old. I started baking at 13 years old, started catering in my 20s - everything I have done 55 years later it still centers around my abilities to bake, cook-prepare and present food!

    You did a pretty great job with this. As some who made thousands of these professionally (or as professional as you can call someone who slangs cheesesteaks), this is the most authentic to my experience that i've seen on youtube.
    People might nitpick the provolone choice, but i think that's fine. One can quibble over Whiz vs American vs Provolone. As long as we all agree that Swiss is an abomination on a cheesesteak, we can all get along

      Weaver Ron tbh most days we (young people) don’t get wiz either. Idk where the ‘only wiz’ myth came from but it’s not accurate. My personal favorite is pepper jack, but provolone is second and is pretty much at every cheesesteak spot in philly

    This was a well produced segment in my opinion. I like how it started with quickly showing the whole process of making a Philly cheesesteak, then it went back to break it down. Great teaching method, IMO.

      Thank your it’s not for everyone, but I believe learning happens through repetition. Many tell me they don’t need the rest of the video after the montage. Good in them, but I believe going in depth even for things like side items helps people feel more confident in the kitchen. Thank you John

    As a kid, visiting family members in North Philly I remember going to a place called "Aunt Mary's where a quality meat was freshly sliced , the cheese was a quality white cheese such as provolone ( maybe even mozzerela) as you used in the video (NEVER cheez wiz!!!) along with carmelized onion mixed with the meat. I also remember a red sauce perhaps a pizza or marinara sauce which was also applied. Also a long fresh Italian roll is key. (As used in making Hoagies!)
    When you brought the cheese steaks home & unwrapped them, the aroma was amazing. Great memories & a great video!

    Just made this and omg its soooooo good. Only thing I did different was add pepper after I scooped it. And since I have a smaller cast iron pan I used one hamburger onion, half a ribeye, and used hoggie buns. Worked perfect since only feeding two.

    Just tried it and it turned out amazing! Im still suprised how easy it was, just the flipping part was a little tricky.... lets just say the meat didnt really landet on the bread. I am just going to do it again and again until I become a flipping master

      I feel like it's pretty well known that Genos/Pats are tourist spots - Never lived there, but in discussions about hitting Philly I've noticed that people often answer they avoided those two on their tourist visit!

    Thanks!!! What started as a experiment for me and the wife. Ended up being a let’s cook for all sides of the family and half the street. 10 adults 5 kids. You sir are a educator. I was able to pull it off and look like a super hero doing it.

    Made this earlier today. Didn't have beef fat, thought I'd use butter but didnt have that either, got the wrong steak, cut it way too thick, didn't mince it well enough, put way too much salt on everything... but it still tasted amazing! Now I know why people enjoy cooking so much 😁 thank you for this vid

    What you did to the ingredients was awesome! What was done to the music, tho...Not so much. :)
    Great idea for the sandwich.
    I'm from Georgia and never had a Philly Cheese steak sandwich worth a hot damn until I went to Philadelphia on a business trip and was asked what I wanted for lunch one day.
    I told my host engineer that I had a pretty good idea that Philly Cheese Steaks could be hella good if done right, but I must not have had one done right because all the ones I'd had back home were all bland AF.
    He grinned, and told me he was going to change all that, and took me to a hole-in-the-wall place that was literally about 20 feet wide, and 50 feet long.
    Long story short - My mind was blown, and I have refused to eat a PCS outside of Philly ever since because I don't want to soil that experience.
    I'm gonna try a variation of this recipe / cook style this weekend, because from my lips to the ears of Sweet Baby Jesus, when these things are done right, they are pretty damn close to the world's most perfect food.

      I thought the same!!! I have the same wood spatula. My ex husband was an HVAC tech and picked it up on a job almost 30 years ago. That size, and one twice as wide. I’m gonna send him a pic of them. He won’t believe I still have them. I have a drywall scraper in the garage 😂

    I just found this channel and as a Philly girl.. this is the best version of a cheesesteak I've seen on RUclips. Provolone is perfectly valid, even if it's not the most popular cheese choice. I like provolone when I get long hots on my cheesesteak

    I just wanted to say that I love your content… you are my favorite RUclips cooking channel to watch. I have been binge watching all of the recipes… I even bought several Washington’s seasoning, golden and brown! 😂 The succinct directions and tips and tricks have leveled my cooking way up, and I’m no rookie in the kitchen. I love that you eyeball ingredients and keep the editing sharp. The comment is coming on this video in particular because of the music… I have been craving a Philly and Magic Man all damn day.     That looks absolutely delicious. Beautifully done. I'm NOT from Philly ( I live in Bay Ridge) but I say Jim's Steaks on South St. has THE best cheese steak.

      Jim's is so inconsistent nowadays and has become an "if you know" tourist trap like how most ppl ask where to go that isn't Pat's or Geno's. We send em to Jim's. I definitely prefer ishkabibbles over them, but also on South Street is Woodrow's which would prob taste similar to this steak as they use beef tallow and quality ingredients just a lil more expensive.

    Nice job - chop on the meat was too thin and let the meat crust up a bit on high heat. Extra points for scooping the steak onto the roll. (Philly boy, born and raised).

      Also talo is s liquidized fat.. The fat on the steak itself can be chewy and unpleasant. I always trim mine. A little bit goes a long way.

    i did this recipe. with onions and added green peppers and provolone. came out amazing! and i've had philly cheese steak in philly several times and this was a real good copy of what you'll get out there. i can now mayke a philly cheese steak in Los Angeles. thanks chef!!!

    You really overdid looping Heart! Good job making the sandwich though! I cook bacon and use the oil to cook the onions in. Much cheaper than the jar of what you are using. What is the bun? You may have said while I turned the volume down through the Heart loop.

    I made this before Thanksgiving and 3 weeks latter I'm back. Used some Ciabatta bread and left over NY strip and sautéed mushrooms onion/with wine, once with cheddar, then Mozzarella with a little jalapeno. Thanks for the tutorial, this is the bomb!

    The key to the real cheesesteak is the fact that a place like Pat’s or Geno’s is open 24hrs 365. They never clean the grill. All the flavor from the grill has built up for generations. Really.

    Being from the Philly area this is probably the best I seen online, let alone at home, and I've made them at several shops for a living. The cheese is preferable, but American is the standard.

    I have eaten Philly Cheesesteak in Philly from many spots, including the two legends you mentioned (you did mention three but one of them never lived up to my expectations). I accidentally came across your channel and made this during an early morning craving. Used a combination of skirt and chuck steak since I had no rib eye in my fridge. I went for clarified butter and cheddar cheese. I CONFIRM IT WAS BY FAR THE CLOSEST AND BEST OPTION COMPARED TO THE REAL DEAL. I am now going to check on your meatball method.

      I'm "at-home vegan" (vegan comments incoming...), elsewhere lacto-ovo-pescetarian with a few exceptions during the year I can count on 1 hand. It's not because I almost never eat meat or buy animal-based food products that I don't like it or force it on anybody else. Quite the contrary: apparently a lot of meat-eaters find it necessary to defend their habits and ask 'original' (not) questions as soon as they discover I prefer a mostly plant-based diet.
