Banana oatmeal muffins
1 cup old-fashioned oats
1 cup 1% buttermilk
1 1/2 cups flour
1 tsp ground cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 large egg
1/2 cup oil
1 cup mashed ripe banana (2 or 3)
1/2 cup lightly packed light brown sugar
1/2 cup chopped walnuts or almonds
Blueberries
1. Combine oats and buttermilk, set aside for 1 hour
2. Preheat oven to 400 degrees. Drop liners into a muffin tin or spray without liners
3. In a separate bowl, whisk together flour, cinnamon, baking powder, baking soda and salt
4. Brak egg into the bowl with soaked oats and beat lightly with fork, then mix. Add oil, banana and sugar. Whisk until wet ingredients are well blended
5. Add dry ingredients, folding just until combined (15 times max): over mixing makes muffins tough
6. Add blueberries and fold them in
7. Spoon batter into muffin tin. Sprinkle nuts over top of batter
8. Bake 20 minutes or until a tooth pick inserted into center of muffins comes out clean. Let sit for 3 minutes, then turn the muffins out onto a wire rack and cool for 15 minutes.
