This will not spoil for the whole year, though we are getting this in the market (called as midigayi in kannada and tender mango pickle in English) . it is very costly moreover they are using chemicals not spoil.
First of all don't use so much salt. Second thing clean mango nicely. Don't keep branches with it . Its a very old pickle recipe. You can use glass jars. For so much mango 500 gram salt is enough. You can add green chillies at same time. It will automatically crumple after some time. You can start to use after week.

To avoid milky sap which comes if you remove them fresh… let it come as late as possible in the process.
Myself. I couldn't get why the bitter stalks.Must be saving time?Mango doesn't sap for long.

500 grams salt is not enough.
