when in doubt They/Them pronouns are always fine as they are gender neutral and have been around for hundreds of years to refer to people you are unsure of as well as groups of people, or even just people you know of but prefer to refer to without gendered terms.
Had someone get OFFENDED when I called her(I think) they/them to be gender neutral, because I didnt know her previously and didn’t know her gender, and I was so ridiculously confused as to why she was upset with me. If anyone could tell me why they/them could possibly be offensive, especially in the event that someone doesn't know your gender and is already trying to avoid assuming it, PLEASE let me know.

Singular they/them has been used to refer to people whose gender isn't known since the 14th century AD.
