Ingredients (makes 2 pans)
2lbs Vension sausage or other meat
2 pie crusts (if frozen, let thaw before cooking)
8-10 eggs
1/2 cup of heavy whipping cream
green onions (1/2 cup for the quiche, rest for garnish)
1 small can Rotel
2-3 cloves minced garlic
shredded cheese
salt and pepper to taste
Directions
brown sausage, drain, and set aside.
heat grill or oven to 375 degrees (if smoking, add smoking chips to grill)
in a large bowl, add eggs and beat until blended
add whipping cream and stir
add in garlic, half of green onions, Rotel, and bell pepper
mix well until blended
add sausage to bottom of pie crusts
add layer of shredded cheese
fill remaining pie crust with mixture
place quiche in grill (or oven) and cook for 45-60 minutes
done when golden brown on top. check by inserting a toothpick into the center. When it's dry, it's done.
garnish with shredded cheese on top, and chopped green onion
